Time 6h25m

Number Of Ingredients 17

1 Tbsp olive oil
2 lbs lean ground beef
1 large yellow onion, (finely chopped)
3 cloves garlic, (finely minced)
2 (14.5 oz) cans diced tomatoes with green chilies*
3 (8 oz) cans tomato sauce
1/2 cup beef broth
2 Tbsp chili powder
2 1/2 tsp ground cumin
2 tsp paprika
2 tsp unsweetened cocoa powder
1 tsp granulated sugar
1/2 tsp ground coriander
Salt and freshly ground black pepper
1 (15 oz) can dark red kidney beans, (drained and rinsed)
1 (15 oz) can light red kidney beans, ( drained and rinsed)
Shredded cheddar cheese, (for serving)

Steps:

  • Heat olive oil in a large and deep non-stick skillet over medium-high heat.
  • Add onion and saute 3 minutes, then add garlic and saute 30 seconds longer. Pour onions into a 6 or 7 quart slow cooker (I like this one HERE).
  • Return skillet to medium-high eat, add beef and cook stirring occasionally until beef has browned.
  • Drain most of fat from beef, leaving about 2 Tbsp in with beef (this is optional, I think it ads flavor but you can drain it all if you'd prefer). Pour browned beef into slow cooker.
  • Stir in diced tomatoes, tomato sauce, beef broth, chili powder, cumin, paprika, cocoa powder, sugar, coriander and season mixture with salt and pepper to taste.
  • Cover with lid and cook on low heat for 5 - 6 hours.
  • Stir in dark and light red kidney beans and allow to heat through, about 2 minutes. Serve warm with desired toppings.

LIGHT CHILI POWDER

Light Chili Powder image

Texas chili uses light and dark chili powder. It took some searching but I found what amounts to a light chili powder - or lighter. Use this to balance out your actual chili powder

Provided by PJ991092

Categories     Low Cholesterol

Time 5m

Yield 1 shake, 6-8 serving(s)

Number Of Ingredients 4

3 tablespoons paprika
1 tablespoon ground cumin
2 tablespoons dried oregano
1 teaspoon cayenne pepper

Steps:

  • Blend together and store in refrigerator for up to 6 months. For best results, grind cumin seed into powder.

Tips:

  • Start with a good quality chili powder. Look for a brand that uses a blend of different chilies to create a complex flavor.
  • Toast the chili powder before using it. This will help to bring out the flavor and aroma of the spices.
  • Use a variety of spices to create a unique flavor profile. Some good options include cumin, oregano, garlic powder, and onion powder.
  • Adjust the heat level to your liking. If you want a milder chili, use less chili powder. If you want a spicier chili, use more chili powder.
  • Add other ingredients to your chili to create a more complex flavor. Some good options include tomatoes, beans, corn, and meat.
  • Simmer your chili for at least 30 minutes to allow the flavors to meld.
  • Serve your chili with your favorite toppings, such as sour cream, cheese, and onions.

Conclusion:

Chili powder is a versatile spice that can be used to make a variety of delicious dishes. With its smoky, slightly sweet flavor, chili powder can add depth and complexity to any dish. Whether you're making a classic chili recipe or experimenting with a new dish, chili powder is sure to please.
