1 tablespoon brown sugar
1 tablespoon canola oil
1/2 teaspoon vanilla
2 tablespoons cocoa powder
1 pinch salt

1 cup low-fat milk
1/4 cup peanut butter

Steps:

  • Cush graham crackers using a rolling pin or in a food processor.

This recipe is actually a combination of a few different recipes in my cookbook collection. It seems to be everyon'e favorite and I get a lot of requests for it but it is so easy. I have also made this with white chocolate pudding and a chocolate crust. Enjoy!

4 tablespoons skim milk
4 tablespoons low-fat peanut butter
1 (8 ounce) container of light Cool Whip
11 ounces skim milk
1 (3 1/4 ounce) package instant chocolate pudding mix
1 ready made shortbread pie crust
1/4 cup chopped peanuts
1 ounce chocolate, chopped (I like to use a bittersweet, like Lindt)

Steps:

  • Mix the 4 tablespoons of milk with the peanut butter (mixture will be thick).
  • Stir in container of cool whip.
  • In a separate bowl, whisk 11 oz. of milk with the pudding for 2 min.(mixture will be thicker than regular pudding).
  • Fold the cool whip mixture into the pudding.
  • Spoon mixture into shortbread crust.
  • Garnish with chopped chocolate and peanuts (I like to use just a little bit for a garnish and let individuals add more on their plate if they want it).
