1 ½ teaspoons baking powder
½ cup milk
3 ½ ounces flaked coconut
1 teaspoon coconut extract
1 cup white sugar
¼ cup water
1 teaspoon coconut extract
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch tube pan.
  • In a large bowl, cream together 2 cups sugar and the butter. Fold in the eggs one at a time, fully incorporating each one before adding another.
  • In separate bowl, mix the flour, baking powder, milk, flaked coconut, and 1 teaspoon coconut extract. Beat into the creamed mixture. Pour the batter into the prepared pan.

8 ounces cream cheese (, softened)
6 eggs
1/4 teaspoon fine sea salt
1 tablespoons coconut extract
1 teaspoon almond extract
2 2/3 cups flour
1 cup sweetened shredded coconut
1 ½ cups powdered sugar
2 tablespoons butter
1 ½ teaspoon coconut extract
2-3 tablespoons whole milk
1-2 tablespoons sweetened shredded coconut

Steps:

  • Spray two 9-inch loaf pans with cooking spray or coat with butter and dust with flour, tapping out excess.

2 cups sugar
1 cup canola oil
2 cups flour, sifted
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
1 teaspoon vanilla
1 cup coconut
1 teaspoon coconut extract
1 cup sugar
1/2 cup water
1/4 cup butter
1 teaspoon coconut extract

Steps:

  • Grease and flour a tube pan. (Don't miss and spots or you won't get the cake out without breaking it.
  • Beat 5 eggs.
  • Add 2 cups sugar and beat well.
  • add 1 cup canola oil.
  • Sift 2 cups flour, 1 1/2 tsp baking powder, 1/2 tsp salt. Add to egg mixture and blend well.
