Categories     main-dish

Yield Serves 4

Number Of Ingredients 9

3 tablespoons olive oil
4 garlic cloves, minced
1/4 teaspoon crushed red pepper flakes
1 pound common white mushrooms, thinly sliced
1 1/2 cups canned crushed tomatoes or tomato puree
1/8 teaspoon dried rosemary crumbled
1/2 teaspoon salt
1 pound linguine
Grated Parmesan cheese to taste

Steps:

  • Bring a large quantity of water to a boil in a stockpot.
  • To make the sauce, heat the olive oil in a medium-size saucepan over medium heat. Add the garlic and crushed red pepper flakes, and cook 30 seconds. Stir in the mushrooms and cook until brown and juicy, about 10 minutes. Mix in the tomatoes, rosemary, and salt, and cook, stirring often, for 10 minutes. If the sauce begins to splatter during cooking, lower the heat to medium-low. Keep the sauce warm while cooking the linguine.
  • Drop the linguine into the boiling water and cook until al dente. Taste one along the way to avoid overcooking it. Drain thoroughly in a colander and return to the pot. Pour on the sauce and toss. Serve with a light sprinkling of Parmesan cheese.

Linguine with Gorgonzola, Prosciutto, and Spinach image

Categories     Garlic     Pasta     Blue Cheese     Basil     Pine Nut     Spinach     Prosciutto     Boil     Gourmet

Yield Serves 4

Number Of Ingredients 11

1 pound dried linguine
1 pound fresh spinach, coarse stems discarded, leaves washed well and spun dry
1/2 pound thinly sliced prosciutto, cut into 1/2-inch pieces
2 tablespoons finely chopped garlic
2 tablespoons chopped fresh basil leaves or 1 tablespoon dried basil, crumbled
2 tablespoons chopped fresh oregano leaves or 1 tablespoon dried oregano, crumbled
3/4 cup olive oil
1/2 pound Gorgonzola, crumbled
1/2 cup pine nuts, toasted until golden
Garnish: fresh basil leaves
Accompaniment: freshly grated Parmesan

Steps:

  • In a 6-quart kettle bring 5 quarts salted water to a boil for linguine.
  • Cut half of spinach leaves into thin strips and reserve remaining whole leaves.
  • In a large heavy skillet cook prosciutto, garlic, basil, and oregano in 1/2 cup oil over moderately high heat, stirring, until lightly browned, about 3 minutes.
  • Add pasta to boiling water and cook until al dente. Drain in a colander. Return pasta to kettle and toss with remaining 1/4 cup oil, prosciutto mixture, cut spinach and Gorgonzola. Season pasta with salt and pepper.
  • Arrange reserved spinach leaves on 4 plates. Mound pasta on spinach and sprinkle with pine nuts. Garnish pasta with basil leaves and serve with Parmesan.

Tips:

  • Use high-quality ingredients. The better the ingredients, the better the dish will taste.
  • Don't overcrowd the pan when cooking the prosciutto. If you do, it will steam instead of brown, and it won't develop its full flavor.
  • Cook the prosciutto until it is crispy. This will give it a delicious, bacon-like flavor.
  • Use a good quality dry red wine for the sauce. A Chianti or a Barbera would be a good choice.
  • Simmer the sauce for at least 30 minutes, or longer if you have time. This will allow the flavors to meld and develop.
  • Serve the pasta immediately, topped with freshly grated Parmesan cheese.

Conclusion:

Linguine a ragu di prosciutto is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is made with simple, everyday ingredients that come together to create a flavorful and satisfying pasta dish. The crispy prosciutto and the rich tomato sauce are a perfect pairing, and the pasta is cooked to perfection. This dish is sure to please everyone at the table.
