MAMA NEELY'S BAKED BEANS

Mama Neely's Baked Beans image

Pat: Every Fourth of July, Mama Neely made her famous baked beans: she'd brown ground beef and then doctor that beef with molasses, brown sugar, and plenty of spices. Let me tell you, those beans were good. And so are these. We've found that using smoked sausage in place of the ground beef (or pork shoulder, as in our restaurant recipe) adds a smoky depth to the dish. Once you make these beans, there is no going back. If you want to put your own spin on it, you can use kidney beans instead of pork and beans, but I say my mama's way is best.

Yield Serves 6

Number Of Ingredients 11

2 tablespoons canola oil
1 large onion, finely chopped
3 cloves garlic, finely chopped
1/2 pound smoked sausage, sliced
Three 16-ounce cans pork and beans
1/2 cup ketchup
1/2 cup light molasses
1/4 cup light-brown sugar
2 tablespoons apple-cider vinegar
2 tablespoons prepared mustard
Dash of hot sauce, preferably Tabasco

Steps:

  • Preheat the oven to 350 degrees F. Heat the oil in a Dutch oven set over medium- high heat. Once it's hot, toss in the onion and garlic, and saute until the onion is tender, about 3 or 4 minutes. Add the sausage, and continue to cook until the meat has browned, about 4 minutes more. Stir in the pork and beans, ketchup, molasses, sugar, vinegar, mustard, and hot sauce. Bring the beans up to a simmer, then put in the hot oven for 45 minutes, uncovered, until the mixture is bubbly and thick.

MOMS EASY BAKED BEANS

Moms Easy Baked Beans image

My mom has been making these easy beans for as long as I can remember, every one loves them. Hope your family does also.

Provided by Todd Feldt

Categories     Beans

Time 2h10m

Yield 4-6 serving(s)

Number Of Ingredients 6

1 (28 ounce) can bush onion baked beans
1 (28 ounce) can bush maple & brown sugar baked beans
1/2 cup light brown sugar
1 tablespoon yellow mustard
1/2 cup ketchup
4 -5 pieces bacon, any flavor

Steps:

  • Simple!
  • Mix all ingredients.
  • Cut up bacon in 1 inch pieces and top the mixture.
  • Bake at 325 for 2 hrs or until cooked down and bacon is fully cooked.
  • Note! you can also add some BBQ sauce to change it up.
  • Enjoy!

Tips:

  • When choosing dried beans, opt for those that are plump and uniform in color. Avoid any beans that are shriveled or discolored.
  • Soaking the beans overnight helps to reduce the cooking time and makes them more digestible. If you're short on time, you can quick-soak the beans by bringing them to a boil in a pot of water, then removing them from the heat and letting them sit for an hour.
  • Use a variety of seasonings to flavor the beans. Common seasonings include salt, pepper, garlic, onion, and brown sugar. You can also add smoked meats, such as bacon or ham, to give the beans a smoky flavor.
  • Bake the beans in a covered dish at a low temperature for several hours. This allows the beans to cook slowly and develop a rich flavor.
  • Serve the beans hot with your favorite side dishes, such as cornbread, coleslaw, or potato salad.

Conclusion:

Baked beans are a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. They're also a great source of protein, fiber, and vitamins. With so many different recipes to choose from, you're sure to find a baked bean recipe that you'll love.
