In Romania it's called Homemade Chocolate. It's easy and sometimes I change the quantities, especially if I want less sugar. I like it with less margarine but the recipe calls for 250 gr.My DD likes to decorate it with pistachios.

200 ml water
375 g sugar
500 g powdered milk
50 g cocoa
125 -250 g margarine
1 tablespoon vanilla sugar

Steps:

  • Mix water and sugar together.
  • Cook for about 10 minutes,till becomes a syrup.
  • Remove from heat add margarine.
  • Then add cocoa and stir slightly.
  • Add powder milk and mix well.
  • Pour into 13"x9" pan and let cool.
  • We usually add nuts, raisins and whatever we find in our kitchen.

2 (1 ounce) squares unsweetened baking chocolate
1 tablespoon butter
1 cup milk
2 cups white sugar
1 pinch salt
1 teaspoon vanilla extract

Steps:

  • Butter a 9x9 inch dish.
  • In a medium saucepan over medium heat, combine chocolate, butter and milk. Bring to a boil and let boil 1 minute. Stir in sugar and salt until dissolved. Heat, stirring constantly, to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface. Remove from heat and stir in vanilla. Let cool 10 minutes.
  • Beat fudge with a spoon until it loses its gloss. Pour quickly into the buttered dish. Refrigerate 30 minutes, until firm.

Lovage is the secret to a good Romanian sour soup. Celery leaves are an OK substitution but it's not exactly the same thing. I grow my own lovage leaves in a flower pot. If sauerkraut juice is not available season the soup with lemon juice and make up the amount with water. Traditionally, borsh is added to make the soup sour,which is fermented wheat bran. Cooking time depends on how quick the meat is boiling.

500 g beef
1 -2 onion
2 carrots
1 leek
1 parsnip
1 parsley root
1/2 celery root
2 potatoes
2 tomatoes
1 -2 tablespoon tomato paste
2 liters water
salt
fresh parsley leaves
lovage, leaves
500 ml sauerkraut juice
vermicelli

Steps:

  • Bring to boil the beef cut into medium sized pieces together with water and salt.
  • Remove the scum several times, then add some salt.
  • Clean and chop or grate the veggies and add them to the soup.
  • Later add the tomatoes . Let it boil for another 10 - 15 minute.
  • Separately boil the pickled cabbage juice then add it to beef soup.
  • Add the noodles.
  • Boil the sour soup for another few minutes, add the tomato paste, put salt and lemon juice to taste.
  • When is cooked, add parsley and lovage leaves.

2 (15 ounce) cans beans
3 (15 ounce) cans chicken stock
200 g smoked pork
1 tablespoon oil
1 tablespoon flour
1 onion, chopped
1 teaspoon paprika
1 tablespoon tomato paste
3 tablespoons vinegar (optional)
salt and pepper

Steps:

  • Saute oil and flour together until light brown.
  • Add onion and paprika, saute for 10 minutes.
  • Add the cubed pork, saute for 5 minutes.

I'm opening a series of Romanian soups,especially sour soups called Chiorba or Borsh.Very popular here, some people eat them everyday. This one is called Chiorba de perisoare. I mentioned that it's optional the sour cream & egg yolks step. It makes the soup richer, even if you skip it the taste is still good.

3 liters water
3 carrots
2 parsley roots
1/4 celery root
2 onions
2 tablespoons tomato paste
salt
200 ml sour cream (optional)
2 egg yolks (optional)
fresh parsley
celery leaves
lovage, leaves
lemon juice
2 tablespoons white rice
1/2 kg ground meat
1 egg
salt
pepper
parsley
breadcrumbs

Steps:

  • To make the meatballs, mix together all the ingredients. Then take a little of this mixture and make little balls (the size that you like - my mom makes them quite big while I prefer them small).
  • Fry the chopped onion in oil .
  • Add the chopped or grated onion,carrot,parsley and celery root.
  • Add the water , salt and leave to boil for 10 - 15 minutes, then add the meatballs to the soup, one by one.
  • Simmer until the meatballs rise - about 30-45 minutes .
  • Add the parsley .
  • Turn off the heat and cover for 15 minutes.
  • This step is optional :In a separate bowl, mix 2 egg yolks with the sour cream. Add the egg/sour cream mixture into the soup.
  • To season the soup add fresh lemon juice - adjusting to taste.
  • Add the chopped parsley,the celery and the lovage leaves.
  • Serve with sour cream.
