LLL BAKING MIX BISCUITS
This is from the La Leche League International Cookbook. When I am in a rush I just cut them into squares so I don't have to roll them out more than once. When the mood hits I will use whatever cookie cutters strike my fancy...my daughters love when I do that. I enjoy experimenting with adding different herbs, spices and spice mixes. Here's how I got my daughters to eat salmon salad sandwiches (once thought to be an impossible task!). I added Lemon Mrs. Dash and dry dill to the biscuit mix, then cut them out with an angel cookie cutter. I filled the cooked biscuits with a salmon and mayonnaise mixture and called them "Flying Pink Angel Sandwiches". They are now a favourite!

BISCUIT BAKING MIX
You need just four common pantry staples to put together this versatile mix. I use it in recipes that call for store-bought baking mix. It's the key to lightly browned biscuits as well as to chunky dumpling soup. -Tami Christman, Soda Springs, Idaho

Tips and Conclusion
Making light and fluffy biscuits with a baking mix is a simple and convenient process that yields delicious results. Here are some tips for baking perfect biscuits with a baking mix:- Use Cold Ingredients: Keeping your butter and milk cold helps create flaky layers in the biscuits. Cold butter will not melt into the flour mixture as easily, resulting in more distinct layers.
- Do Not Overmix: Overmixing the dough can result in tough biscuits. Gently stir the ingredients until just combined. Overmixing develops the gluten in the flour, which can lead to a dense texture.
- Cut the Butter into Small Pieces: Cutting the butter into small pieces helps it distribute evenly throughout the flour mixture. This will ensure that each bite of your biscuit has a rich, buttery flavor.
- Chill the Dough: Chilling the dough before baking allows the gluten to relax, resulting in more tender biscuits. You can chill the dough for at least 30 minutes, or up to overnight.
- Bake at a High Temperature: Baking the biscuits at a high temperature helps them rise quickly, creating light and fluffy layers. A temperature of 450°F (230°C) is ideal.
