BUFFALO CHICKEN AND ROASTED POTATO CASSEROLE

Buffalo Chicken and Roasted Potato Casserole image

This recipe was passed to me by a friend whose husband loved Buffalo wings and baked potatoes. I made it for the first time for my crew of boys and it was a big hit. Being a single working mom and short on time, I made some shortcuts to the recipe and to my surprise, it tasted even better.

Tips:

  • Choose the right potatoes. Yukon Gold or Russet potatoes are good choices for this recipe, as they hold their shape well when baked.
  • Cut the potatoes into evenly sized pieces. This will help them cook evenly.
  • Don't overcrowd the baking dish. If the potatoes are too close together, they won't cook evenly.
  • Season the potatoes well. Salt, pepper, and garlic powder are a good starting point, but you can also add other herbs and spices to taste.
  • Bake the potatoes until they are tender. This will take about 45 minutes to an hour.
  • Shred the chicken before adding it to the casserole. This will help it distribute evenly throughout the dish.
  • Use a variety of cheeses. A combination of cheddar, mozzarella, and Parmesan will give the casserole a rich and flavorful taste.
  • Don't overcook the casserole. Bake it just until the cheese is melted and bubbly.

Conclusion:

Loaded chicken and potatoes casserole is a hearty and comforting dish that is perfect for a family meal. It is easy to make and can be tailored to your own taste preferences. With a few simple tips, you can make a delicious casserole that everyone will love.
