- Trim the asparagus by removing the bottom inch. You can save the trimmings for soup stock, if you'd like.
- In a shallow bowl combine the flour, 1/2 cup Parmesan, and seasoned salt.
- In another shallow dish, add the buttermilk.
- Coat the asparagus first in the flour mixture, then dip into the buttermilk, and then dredge in the flour coating again.
- Place the coated asparagus on a wire rack. Repeat with all the asparagus, and allow to rest for about 5 minutes before frying.
- Add oil to your cooking vessel until it is 2 inches deep. Heat the oil to 350°F. Drop a few asparagus spears in at a time, and fry until golden brown. Remove the golden asparagus, and allow them to drain on a wire rack over a baking sheet.
- Garnish with the remaining Parmesan cheese, and serve with optional ranch dipping sauce or other sauce of your choice

- Combine ingredients for marinade and pour over chicken. Marinate in refrigerator for 2 to 3 hours or overnight. Grill 12 to 15 minutes, until chicken is done. Set aside. RANCH SPREAD: Mix 1/4 cup of grated Parmesan and 1/4 cup ranch dressing. Spread 1 tablespoon onto each chicken breast. Then, top with provolone cheese. Mix bread crumbs, garlic powder, shredded Parmesan, and butter. The crumbs should be evenly moistened. Sprinkle on top of the provolone cheese. Position rack 6 to 8 inches from broiler. Preheat broiler. Transfer cooked chicken to oven-safe casserole dish. Place chicken under broiler and cook until cheese melts and crumb topping begins to turn light brown. Serve immediately.

- Preheat the oven to 425 degrees F (220 degrees C). Spray a baking sheet with cooking spray.
- Mix 1 cup flour and 1 cup grated Parmesan cheese together in one bowl. Mix egg whites and chives together until foamy in a second bowl. Mix 4 cups shredded Parmesan cheese and 2 tablespoons flour together in a third bowl.
- Using tongs and working with one piece of asparagus at a time, coat asparagus in the flour mixture, shaking off the excess. Transfer to the egg white mixture; coat evenly and let the excess run off. Finally coat in the Parmesan cheese mixture, pressing gently so the cheese adheres.
