LOW CARB CHILE RELLENO CASSEROLE

Low Carb Chile Relleno Casserole image

This was very good and much easier than stuffing the cheese into the chiles, but with pretty much the same flavor of the traditional method. If you don't care for hot food, you could use plain Monterey jack cheese instead of the pepper-jack. For myself I added more pepper. Store the prepped ingredients in airtight containers in the refrigerator until ready to assemble and bake the casserole.
  • Use a variety of vegetables: Don't limit yourself to just one or two types of vegetables in your casserole. The more variety, the better! Some great options include bell peppers, zucchini, mushrooms, spinach, and corn.
  • Don't skimp on the spices: Spices are essential for adding flavor to your casserole. Feel free to experiment with different combinations to find one that you love. Some popular choices include chili powder, cumin, paprika, garlic powder, and onion powder.
  • Use a thickener: If you find that your casserole is too thin, you can add a thickener to help it set. Some common thickeners include cornstarch, flour, and arrowroot powder. Be sure to follow the package directions for the thickener you choose.
  • Serve with your favorite toppings: Once your casserole is baked, you can serve it with a variety of toppings to add even more flavor and texture. Some popular options include shredded cheese, sour cream, avocado, salsa, and cilantro.
