This coleslaw is easy to make and tastes great. My husband thought is was from KFC - only better! Give it a try. It's good with most meats, but I really like it on corned beef or hamburgers.

Yield 8 serving(s)

Number Of Ingredients 11

4 cups finely chopped cabbage
1/2 cup shredded carrot
4 (1 g) packages Splenda sugar substitute
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup milk

1/4 cup buttermilk
1 1/2 tablespoons white vinegar
2 1/2 tablespoons lemon juice
3 tablespoons minced onions

Steps:

  • Chop the cabbage into very fine pieces about the size of rice kernels; I use the shredder on my food processor and then use the grater attachment. I find this works just perfectly.

  • Combine the Splenda, salt, pepper, milk, mayonnaise, buttermilk, vinegar, and lemon juice and whisk together until smooth.

Tips:

  • Use a variety of vegetables. Don't just stick to cabbage; try adding other vegetables like carrots, broccoli, cauliflower, radishes, or bell peppers.
  • Shred your vegetables finely. This will help them absorb the dressing better and make the coleslaw easier to eat.
  • Use a creamy mayonnaise-based dressing. This is the classic coleslaw dressing, and it's hard to beat. However, you can also try a vinegar-based dressing, a yogurt-based dressing, or even a mustard-based dressing.
  • Add some extras. To give your coleslaw a little extra flavor, try adding some chopped nuts, seeds, fruit, or herbs.
  • Chill your coleslaw before serving. This will help the flavors meld together and make the coleslaw more refreshing.

Conclusion:

Low-carb coleslaw is a delicious and healthy side dish that's perfect for any occasion. It's easy to make, and it can be tailored to your own personal taste. So next time you're looking for a healthy and satisfying side dish, give low-carb coleslaw a try. You won't be disappointed!
