Time 27m

Yield 24 cookies, 12 serving(s)

Number Of Ingredients 11

1 cup whole wheat pastry flour
1 1/2 cups oats
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup firmly-packed brown sugar
2 egg whites
2 tablespoons no suger added applesauce
1 very ripe medium banana, mashed
1 teaspoon vanilla extract
1 cup dried fruit

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl, combine flour, oats, baking powder, baking soda, salt and sugar.
  • Add egg whites, applesauce and vanilla. Mix well with a wooden spoon.
  • Fold in dried fruit.
  • Drop by tablespoon full on to baking sheet lined with parchment or silicone mat.
  • Bake for 12 minutes or until lightly golden.

Tips:

  • Use ripe bananas: Overripe bananas are sweeter and have a more intense flavor, making them perfect for these cookies.
  • Mash the bananas well: Make sure the bananas are mashed until they are completely smooth, with no lumps. This will help the cookies have a uniform texture.
  • Use a combination of flours: Using a combination of whole wheat flour and oat flour gives the cookies a more complex flavor and texture.
  • Add nuts or seeds: For an extra boost of flavor and crunch, add chopped nuts or seeds to the dough. Some popular options include walnuts, almonds, pecans, chia seeds, and flax seeds.
  • Bake the cookies until they are just set: Overbaking will make the cookies dry and crumbly. Bake them until they are just set in the center, then remove them from the oven and let them cool on a wire rack.

Conclusion:

These low-fat breakfast cookies are a delicious and nutritious way to start your day. They are packed with fiber, protein, and healthy fats, and they are also a good source of vitamins and minerals.
