CELERY SEED DRESSING

Have had this recipe for quite a while. Just recently it was served (by a caterer) at a luncheon I was at. They also added chinese noodles which gave it a wonderful crunch. I think that I will try it with candied pecans the next time I make it.

LOW-FAT CELERY SEED DRESSING

Low-Fat Celery Seed Dressing image

This is a modified version of the "Ten Dollar Dressing" using thickened broth in place of some of the oil and Splenda instead of sugar. I'm still working on it--any modifications are welcomed!

Categories     Salad Dressings

Time 25m

Yield 3 cups, 24 serving(s)

Number Of Ingredients 16

1/2 cup vegetable oil
3/4 cup cider vinegar
1 1/2 cups Splenda sugar substitute
3 tablespoons dry onion flakes
3 teaspoons dry mustard
3 teaspoons paprika
3 teaspoons celery seeds
3 teaspoons salt
1/2 cup water
1 tablespoon low-sodium vegetable bouillon granules
1 cup boiling water
2 teaspoons cornstarch
1 tablespoon cornstarch
1 cup fat free chicken broth
2 teaspoons cornstarch
1 tablespoon cornstarch

Steps:

  • To make the vegetable broth oil substitute:
  • Bring a cup of water to boil, add the broth powder and mix well.
  • Reserve 2 tablespoons of the broth and set aside.
  • Off heat, add 1 tablespoon of cornstarch to the veg broth, stirring quickly so the cornstarch dissolves.
  • Take 2 teaspoons of cornstarch and add to the reserved veg broth, stirring quickly.
  • Back on heat, stir in the new cornstarch broth mixture to make a gel.
  • Let cool in fridge. (This makes it into a sort of paste).
  • To make the chicken broth oil substitute, repeat steps 3-7. The chicken broth mixture isn't as thick and pasty.
  • Once the broth is cool, add all the ingredients and blend in a blender. The consistency isn't as thick as the original, but it's not as bad as just using water instead of oil. The consistency without the water is much better, but the taste wasn't quite on.
  • I know it seems like a lot steps - if you want to choose just the chicken broth mixture instead of both the chicken and veg broth or vice versa, I'm sure it would be fine, I was just trying to find the best taste! Like I said -- still working on it!

Tips:

  • To make a creamy dressing, blend silken tofu or Greek yogurt with the other ingredients.
  • For a tangy dressing, add a squeeze of lemon juice or a splash of vinegar.
  • To add sweetness, use a natural sweetener like honey or maple syrup.
  • To add a savory flavor, add a pinch of salt or a teaspoon of Dijon mustard.
  • To add a bit of heat, add a pinch of cayenne pepper or a teaspoon of Sriracha sauce.
  • To make a thicker dressing, add a tablespoon of cornstarch or arrowroot powder.
  • To make a thinner dressing, add a tablespoon of water or broth.
  • Store the dressing in an airtight container in the refrigerator for up to 5 days.
