2 cups sugar
1 can (15 ounces) solid-pack pumpkin
1 cup unsweetened applesauce
1/2 cup egg substitute
3-1/3 cups all-purpose flour
2 teaspoons ground cinnamon
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground nutmeg or allspice
1 cup chopped nuts or raisins, optional

Steps:

  • In a bowl, combine the sugar, pumpkin, applesauce and egg substitute; mix well. Combine the flour, cinnamon, baking soda, baking powder, salt and nutmeg; gradually add to pumpkin mixture and mix well. Stir in nuts or raisins if desired. 1 tablespoon pumpkin pie spice

2 cups sugar substitute
6 ounces pumpkin
1/4 cup water

1/2 teaspoon sea salt
1 tablespoon pumpkin pie spice
1 teaspoon baking powder
1 egg
1 tablespoon canola oil
1 cup Splenda granular
7 1/2 ounces pumpkin puree (1/2 can)
1/2 cup unsweetened applesauce

Steps:

  • Preheat oven to 350 degrees.
  • Grease a loaf pan, and set aside.
  • Combine flours, salt, pumpkin spice, and baking powder in a med sized bowl.
  • Combine egg, cannola oil, splenda, pumpkin, and apple sauce in another bowl.
