LOW FAT TACO CASSEROLE

Hopefully you will enjoy this as much as my family does. If you like spicy, bake the Jalapenos on top of the casserole! For those of you that aren't looking for "low fat" you may used ground hamburger in place of the ground turkey.

LOW-FAT TACO CASSEROLE

I got this recipe years ago from my Weight Watchers leader and have been making it ever since. Both my hubby and I really enjoy it...even though he typically is not a fan of anything with "low-fat" in the title!

Time 45m

Yield 8 serving(s)

Number Of Ingredients 7

12 taco shells
1 lb ground turkey or 1 lb lean ground beef
1 (1 1/4 ounce) package taco seasoning
1 (16 ounce) can red kidney beans, drained
1 (10 1/2 ounce) can reduced-fat cream of mushroom soup
1 cup salsa
6 ounces shredded reduced-fat cheese

Steps:

  • Brown meat until no longer pink and drain (I also rinse it to remove any additional fat) and follow instructions on taco seasoning packet.
  • Crumble six taco shells into the bottom of a 9x13 pan.
  • Spread meat mixture evenly over top of shells, spread kidney beans over the meat, spread soup over kidney beans, sprinkle cheese over soup, crumble remaining taco shells over cheese.
  • Bake at 350 degrees for 30 minutes.

Tips:

  • Use lean ground beef or turkey: This will help reduce the fat content of the casserole without sacrificing flavor.
  • Drain the ground beef or turkey thoroughly: This will remove excess grease.
  • Use low-fat or non-fat dairy products: This will further reduce the fat content of the casserole.
  • Use whole wheat tortillas: This will add fiber and nutrients to the casserole.
  • Load up on vegetables: Add as many vegetables as you can to the casserole. This will make it more nutritious and filling.
  • Use a variety of spices and seasonings: This will give the casserole a delicious flavor.
  • Don't overcook the casserole: The casserole should be cooked until the vegetables are tender and the cheese is melted, but not overcooked. Otherwise, the casserole will become dry and tough.

Conclusion:

Low-fat taco casserole is a delicious and easy-to-make meal that is perfect for busy weeknights. It is also a great way to use up leftover taco meat. With a few simple tips, you can make a low-fat taco casserole that is just as delicious and satisfying as the traditional version. So next time you are looking for a quick and easy meal, give low-fat taco casserole a try. You won't be disappointed.
