1 teaspoon canola oil
8 eggs or 16 egg whites
1/4 teaspoon dried dill weed
1/4 teaspoon salt
2 medium green onions, chopped (2 tablespoons)
3 oz salmon lox, chopped
2 tablespoons reduced-fat cream cheese (Neufchâtel)
Reduced-fat sour cream, if desired
Capers, if desired

Steps:

  • Coat 12-inch nonstick skillet with oil; heat over medium heat. In large bowl, beat eggs, dill weed and salt with fork or wire whisk until well blended. Pour egg mixture into skillet. Cook uncovered 4 minutes; as mixture begins to set on bottom and side, gently lift cooked portions with spatula so that thin, uncooked portion can flow to bottom. Avoid constant stirring.
  • Gently stir in onions and lox. Drop cream cheese by teaspoonfuls onto mixture. Cook 4 to 5 minutes, stirring gently, until eggs are thickened but still moist. Garnish with sour cream and capers.

LOX AND CREAM CHEESE SCRAMBLED EGGS

Lox and Cream Cheese Scrambled Eggs image

I made up this recipe last week and everyone loved it! It's so fast and easy and probably even tastier with regular cream cheese. I used Jarlsberg but you can use any cheese you like. Good recipe for those following a low-carb diet.

Time 10m

Yield 2 serving(s)

Number Of Ingredients 8

butter
4 eggs
1 tablespoon milk
2 ounces lox, cut in small strips
2 tablespoons low-fat cream cheese
1/4 cup jarlsberg cheese, diced
salt
pepper

Steps:

  • Beat eggs. (I find they get fluffier if you beat the yolks and whites separately and then mix them together.) Add milk and stir.
  • Melt butter in a frying pan over medium-high heat.
  • Add eggs and stir.
  • When eggs are nearly set, sprinkle in the cheese, cream cheese, and lox and stir until eggs are just set (don't overcook!).
  • Add salt and pepper to taste.

Tips:

  • Use fresh ingredients: The fresher the ingredients, the better your scramble will taste. Choose high-quality smoked salmon and cream cheese, and use fresh eggs and chopped vegetables.
  • Don't overcook the eggs: Lox and cream cheese scramble should be cooked until the eggs are just set, but still slightly runny. Overcooked eggs will be tough and dry.
  • Add your favorite toppings: In addition to lox and cream cheese, you can add other toppings to your scramble, such as chopped chives, diced tomatoes, or crumbled bacon. Get creative and experiment with different flavors.

Conclusion:

Lox and cream cheese scramble is a delicious and versatile breakfast dish that can be enjoyed any time of day. It's easy to make and can be tailored to your own preferences. With a few simple tips, you can make the perfect lox and cream cheese scramble every time. So next time you're looking for a quick and easy breakfast, give this recipe a try. You won't be disappointed!
