Provided by Food Network Kitchen

Time 35m

Yield 4 servings

Number Of Ingredients 13

Kosher salt
2 live lobsters (1 1/4 to 1 1/2 pounds each)
5 slices bacon
1/3 cup mayonnaise
1 stalk celery, finely chopped, plus 1 tablespoon chopped celery leaves
2 tablespoons chopped fresh basil
2 tablespoons fresh lemon juice
2 tablespoons unsalted butter
4 top-split hot dog buns
Freshly ground black pepper
4 leaves Boston or Bibb lettuce
1 tomato, halved and thinly sliced
1 tablespoon chopped fresh chives

Steps:

  • Fill a large pot with about 2 inches of water. Add 1 tablespoon salt and bring to a boil. Add the lobsters, cover and cook until the shells are bright red, about 10 minutes. Remove to a colander using tongs, then rinse under cold water to cool slightly.
  • Remove the meat from each lobster: Twist off the claws and tail. Remove the flippers at the end of the tail and insert your thumb to force out the meat. Crack the claws with the flat side of a knife or a lobster cracker; remove the meat. Roughly chop the lobster meat, transfer to a bowl and refrigerate about 15 minutes.
  • Meanwhile, preheat the oven to 400 degrees F. Lay the bacon on a foil-lined baking sheet and bake until browned and crisp, about 15 minutes; drain on paper towels. Combine the mayonnaise, chopped celery, basil and lemon juice in a large bowl; set aside.
  • Melt the butter in a large skillet over medium heat; add the buns and toast about 2 minutes per side. Spread about 1 tablespoon of the herbed mayonnaise in each roll. Stir the lobster meat into the remaining mayonnaise and season with salt and pepper. Fill each roll with a lettuce leaf, 1 slice of bacon, some lobster salad and a few tomato slices. Sprinkle with the celery leaves and chives. Crumble the remaining bacon slice and sprinkle on top.

PERFECT LOBSTER ROLL

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Seafood Recipes

Time 55m

Number Of Ingredients 7

Two 2 1/2-pound or three 1 1/2-pound live lobsters
1/3 cup mayonnaise
2 tablespoons fresh lemon juice
1 teaspoon coarse salt
4 top-split buns
Melted unsalted butter
Lemon wedges and potato chips, for serving

Steps:

  • Steam Lobster: In a large pot lined with a steamer basket, bring 1 inch of water to a boil. Drop the lobsters headfirst into the pot and cover. Reduce heat to a simmer and steam until the shells just turn bright red, 12 to 14 minutes. To check for doneness, pull on an antenna; if it releases from the shell with little resistance, the lobster is properly cooked. (Many seafood markets will do the steaming for you -- just ask.)
  • Extract Meat: Hold the tail in one hand and the body in the other; twist and pull to separate. For claws and legs, twist and pull where they're attached to the body. Use lobster- or nutcrackers or a mallet to crack the shells. To get all the meat out in one swift motion, insert a fork into the underside of the tail and push up. Then chop into bite-size pieces.
  • Mix, Toast, and Fill: In a bowl, stir together mayonnaise, lemon juice, and salt. Fold in chopped lobster meat. Heat a large skillet (preferably cast-iron) over medium. Generously brush top and sides of buns with butter. (Top-split are narrower than side-split, so you get a greater ratio of lobster to bread.) Place buns, flat-side down, in skillet and toast, flipping halfway through, until crisp and golden on both sides, about 3 minutes. Divide lobster meat among buns and serve, with lemon wedges and potato chips.

Tips:

  • Use fresh, high-quality ingredients: The quality of your ingredients will directly impact the taste of your lobster roll. Use fresh lobster meat, mayonnaise, and celery.
  • Cook the lobster meat properly: Overcooked lobster meat will be tough and chewy. Cook it just until it is opaque and tender.
  • Use a good quality mayonnaise: The mayonnaise is the binder that holds the lobster roll together. Use a mayonnaise that is thick and creamy, and avoid using low-fat or fat-free mayonnaise.
  • Add some flavor to the mayonnaise: You can add some flavor to the mayonnaise by mixing in some herbs, spices, or citrus zest.
  • Use a toasted bun: A toasted bun will help to hold the lobster roll together and add a bit of crunch.
  • Serve the lobster roll immediately: Lobster rolls are best served immediately after they are made. If you need to make them ahead of time, store them in the refrigerator for up to 2 hours.

Conclusion:

The lobster roll is a classic American seafood dish that is perfect for any occasion. With its fresh, succulent lobster meat, creamy mayonnaise, and toasted bun, it is a dish that is sure to please everyone. Follow these tips to make the best lobster roll possible.
