6 bone-in, skin-on chicken thighs, skin removed
Kosher salt and freshly ground black pepper
1/2 cup all-purpose flour
2 tablespoons olive oil
1 small onion, finely chopped
1/2 pound sliced cremini mushrooms
4 cloves garlic, minced
1 red bell pepper, thinly sliced
1/2 cup dry white wine
1 teaspoon finely chopped fresh oregano
1 teaspoon finely chopped fresh rosemary
One 28-ounce can whole tomatoes, cut up with kitchen shears
3/4 cup halved black olives
2 tablespoons drained capers
1/4 cup torn fresh basil leaves

Steps:

  • Sprinkle the chicken thighs with salt and pepper, then toss them in a bowl with the flour to lightly coat.
  • Heat the olive oil in a large, wide pot over medium-high heat until shimmering. Add the thighs and cook, turning once, until golden brown on both sides, about 3 minutes per side. Remove the thighs to a plate.
  • Add the onion and mushrooms to the pot and cook, stirring, until the onion is softened and the mushrooms are lightly golden, about 5 minutes. 2 chicken breasts with skin and backbone, halved crosswise
2 teaspoons salt, plus more to taste
1 teaspoon freshly ground black pepper, plus more to taste
1/2 cup all purpose flour, for dredging
3 tablespoons olive oil
1 large red bell pepper, chopped
1 onion, chopped
3 garlic cloves, finely chopped
3/4 cup dry white wine
1 ( 28-ounce) can diced tomatoes with juice
3/4 cup reduced-sodium chicken broth
3 tablespoons drained capers
1 1/2 teaspoons dried oregano leaves
1/4 cup coarsely chopped fresh basil leaves

Steps:

  • Sprinkle the chicken pieces with 1 teaspoon of each salt and pepper. Dredge the chicken pieces in the flour to coat lightly.
  • In a large heavy saute pan, heat the oil over a medium-high flame. Add the chicken pieces to the pan and saute just until brown, about 5 minutes per side. 1/4 cup all-purpose flour
Salt and pepper to taste

1 large onion, chopped
2 celery ribs, sliced

This came from an idea to use up left-over baked chicken. I adapted my favorite Italian Cacciatore recipe and the results were wonderful, so said my family. So I worked it a bit so it could be made from the start. This is now in my regular rotation. Play around with the spices until it suits you! This can be made with any type of chicken, with or without bones. And, of course, if using leftover baked chicken go to step 3 where veggies are added.

4 -5 lbs skinless chicken, bone in (I use leg 1/4s and cut them apart)
2 tablespoons olive oil
2 red peppers, cut into strips
1 medium onion, sliced in rings
2 garlic cloves, minced
1 (28 ounce) can diced tomatoes
3/4 cup dry red wine
1 (15 ounce) can black beans, rinsed
1/2 teaspoon salt
1 tablespoon chili powder
1/2 teaspoon cayenne
1 tablespoon cumin

1/8 teaspoon black pepper
1 tablespoon parsley, chopped

Steps:

  • Preheat oven to 500
  • In a skillet,in hot olive oil, cook skinless chicken until it's evenly browned, remove to casserole dish.

3/4 pound mushrooms, halved
2 green bell peppers, diced

1 teaspoon (generous) dried oregano
1 cup purchased marinara sauce
2/3 cup canned low-salt chicken broth
1/2 cup dry Marsala
3 tablespoons drained capers
Grated Parmesan cheese (optional)

Steps:

  • Season chicken with salt and pepper. Place flour in plastic bag. Add chicken pieces and toss to coat completely.
  • Heat 3 tablespoons olive oil in heavy large skillet over medium-high heat. Add chicken pieces to skillet and sauté until brown, about 4 minutes per side. Transfer chicken to plate. Pour fat from skillet. Add remaining 3 tablespoons olive oil to skillet. Add halved mushrooms, diced green bell peppers, chopped onion, chopped garlic and oregano and sauté until onion is tender, about 10 minutes. Mix in marinara sauce, chicken broth, Marsala and capers. 2 tablespoons extra-virgin olive oil, or to taste
8 (8 ounce) chicken leg quarters with skin
1 large bell pepper, finely chopped
1 medium onion, finely chopped
1 stalk celery with leaves, finely chopped
1 medium carrot, finely chopped
4 cloves garlic, minced
1 (6 ounce) can tomato paste
1 (28 ounce) can crushed San Marzano tomatoes
1 cup red wine

1 large bay leaf

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
