2 teaspoons dry mustard

⅛ teaspoon cayenne pepper
6 tablespoons all-purpose flour
3 ½ cups milk
1 ¾ cups heavy cream
2 teaspoons Worcestershire sauce
4 ounces extra-sharp yellow Cheddar cheese, shredded (about 1 cup), plus 4 oz. diced (about 1 cup), divided
4 ounces sharp white Cheddar cheese, shredded, (about 1 cup), plus 4 oz. diced (about 1 cup), divided

  • Preheat oven to 350°F. Prepare pasta according to package directions for al dente.

Stir in pasta and diced cheeses; pour into a lightly greased 13- x 9-inch (3-quart) baking dish.
  • Bake on a rimmed baking sheet in preheated oven until bubbly and golden, 30 minutes. Remove from oven; increase oven temperature to broil. Sprinkle with reserved shredded cheeses; broil 6 inches from heat until cheeses are melted and golden, about 2 minutes. Remove from oven; cool slightly on a wire rack, about 15 minutes.

2 ounces blue cheese, such as Roquefort, crumbled

2 slices white sandwich bread, crusts removed

  • Preheat the oven to 400 degrees F.

1 large egg
1/2 tsp. nutmeg, freshly grated

12 oz. tube, elbow or other macaroni , cooked drained
2 cups bread crumbs
1 to 2 tbsp. butter

  • 1. Chop bacon and cook til crisp; drain, reserving 1 Tbsp. drippings. Cook garlic in drippings about 1 minute; set bacon and garlic aside. Sprinkle with remaining cheeses. Melt butter and toss with breadcrumbs. Sprinkle crumbs over pasta. Bake in preheated 425 oven til sauce bubbles and crumbs are browned, about 30 minutes.

2 ounces triple cream brie (or Saint-Andre cheese)
8 ounces smoked gouda cheese, shredded
16 ounces parmesan cheese, grated
8 ounces goat cheese
16 ounces sour cream
1 cup thin-sliced prosciutto ham, cut into strips (omit for vegetarian)
1 cup fresh green peas (or frozen peas, thawed)
24 ounces dry macaroni, cooked and well drained (elbows or penne)
1 tablespoon minced black truffle
