1 cup elbow macaroni
1 (15 ounce) can red kidney beans, drained and rinsed
½ cup chopped celery
½ cup light mayonnaise
¼ cup chopped onion
2 tablespoons red wine vinegar, or to taste
salt and ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until cooked through but firm to the bite, 6 to 8 minutes. Drain and rinse with cold water.
  • Combine cooked macaroni, kidney beans, celery, light mayonnaise, onion, red wine vinegar, salt, and black pepper in a bowl until well mixed. Chill in refrigerator for at least 2 hours.

2 cups uncooked elbow macaroni
1 can (4-1/2 ounces) sliced ripe olives, drained
2 celery ribs, sliced
3/4 cup garbanzo beans or chickpeas, rinsed and drained
3/4 cup kidney beans
1/2 cup mayonnaise
1/2 cup cubed Monterey Jack cheese
1/2 cup cubed Colby-Monterey Jack cheese
1/4 cup Italian salad dressing
2 tablespoons white wine vinegar
2 teaspoons seasoned salt
1/4 teaspoon pepper

(2 teaspoons is not a lot once mixed with the rest of the ingredients) Seasons the pasta and avoids father salting in the recipe. This can be eaten as a side or a main balanced meal. I opted for yogurt and smart balance for better health. But you can use sour cream and mayo.

16 ounces canned low sodium corn (rinsed, drained and smoked or grilled for flavor)
16 ounces low-sodium black beans, and drained
1 lime, juice
1 tablespoon chipotle chile in adobo, Minced
1 teaspoon minced garlic
1/2 cup diced celery
1/2 cup sliced scallion
1 cup salsa (your favorite,I do hot)
1/4 cup fresh cilantro, chopped or
1/4 cup fresh parsley, chopped
1/2 cup Greek yogurt
1/2 cup smart balance mayonnaise

1 can dark red kidney beans, drained and rinsed
1 (8 ounce) package rainbow rotini pasta
1 (10 ounce) package frozen peas
1/2 cup celery, chopped fine
1 -2 small onion, diced
1/2 green pepper, chopped fine
1 jar pimiento, chopped
2 cups Miracle Whip
1 cup half-and-half
1/2 cup sugar
1 teaspoon prepared mustard
vinegar, to soak kidney beans (I prefer apple)

Steps:

  • Drain beans and place in a small bowl.
  • Cover with vinegar and let sit 1 hr.
  • Cook and drain Rotini according to pkg directions.
  • In a large bowl combine next 8 ingredients.
  • Combine Salad dressing, half and half, sugar, and mustard.
  • Mix well and pour over all.
  • Chill and serve.
