1 yellow bell pepper, seeded and sliced
1 green bell pepper, seeded and sliced
1 red bell pepper, seeded and sliced
2 ½ cups mushroom, sliced
1 medium yellow onion, diced
1 tablespoon chili powder
1 tablespoon paprika
1 tablespoon garlic powder
1 tablespoon cumin
1 teaspoon salt
1 teaspoon pepper
3 tablespoons olive oil
4 cups penne pasta, uncooked
1 ½ cups sour cream
3 cups shredded pepper jack cheese
fresh parsley, chopped. for garnish

Steps:

  • Preheat the oven to 400°F (200°C).
  • In a nonstick baking dish, add the bell peppers, mushrooms, and onion.
  • In a small bowl, combine the chili powder, paprika, garlic powder, cumin, salt, and pepper.
  • Pour the olive oil and half of the spice mix over the vegetables and toss well to coat.
  • Bake the vegetables for about 30 minutes, stirring occasionally, until tender.

2 tbsp olive oil
2 large skinless chicken breasts, cut into strips
1 onion, thinly sliced
1 red pepper, deseeded and sliced
1 yellow pepper, deseeded and sliced
1 garlic clove, crushed
1⁄4 tsp chilli powder
1 heaped tsp sweet smoked paprika
1⁄2 tsp dried oregano
1 tsp ground coriander
1⁄2 tsp ground cumin
3 tbsp tomato purée
80ml double cream
350g penne or rigatoni pasta
1⁄2 small bunch of flat-leaf parsley, finely chopped
grated parmesan or cheddar, to serve

Steps:

  • Heat the oil in a large shallow casserole or frying pan. Add the chicken and fry for 5 mins over a medium heat until golden all over. Remove and set aside on a plate.
  • Put the onion and peppers in the same pan and fry over a medium heat for 8-10 mins. Add the garlic, dried herbs and spices and cook for 1 min. Add the tomato purée and cook for 2 mins. Return the chicken to the pan and pour in the cream, stirring to combine. Season to taste.
  • Cook the pasta following pack instructions, then drain and reserve 150ml of the cooking water. Add the pasta to the pan with 50ml of the water and stir everything together over the heat. Add a little more water to loosen if needed. Season to taste and stir through the parsley. Divide between six bowls and top with a little cheese and extra chopped parsley, if you like. This can be packed into a lunchbox and eaten cold, too.

1 pound ziti pasta
1 tablespoon vegetable oil
1 onion, sliced
1 green bell pepper, sliced
1 pound boneless chicken breast, cubed
1 (16 ounce) jar salsa
2 (8 ounce) packages cream cheese, softened
1 (1 ounce) package taco seasoning
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can corn, drained
1 (16 ounce) package shredded Cheddar cheese, divided

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in ziti and return to a boil. Cook pasta uncovered, stirring occasionally, until tender yet firm to the bite, about 10 minutes. Drain.
  • Heat oil in a skillet over medium heat; add onion and green pepper. Cook and stir until soft, 5 to 7 minutes; remove from skillet. Place chicken into the skillet; cook and stir until no longer pink, 7 to 10 minutes.

1 tablespoon vegetable oil
1 lb boneless skinless chicken breasts, cut in half lengthwise, then crosswise into 1/2-inch slices
1 cup thinly sliced red bell pepper
1 cup thinly sliced poblano chiles
1 cup thinly sliced red onion
1 package (0.85 oz) Old El Paso™ taco seasoning mix chicken
2/3 cup water
1 3/4 cups milk
3/4 cup heavy whipping cream
3 tablespoons butter
2 cloves garlic, finely chopped
3 tablespoons Gold Medal™ all-purpose flour
1 teaspoon salt
1 1/2 cups shredded pepper Jack cheese (6 oz)
1 1/2 cups shredded Cheddar cheese (6 oz)
1 cup crushed tortilla chips
2 tablespoons sliced green onions

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Cook and drain pasta as directed on package.
  • Meanwhile, in Dutch oven, heat oil over medium-high heat. Add chicken; cook 4 to 6 minutes, stirring occasionally, until no longer pink in center.   • Gradually stir in milk mixture. Increase heat to medium-high; heat to boiling, stirring constantly. Boil and stir 1 minute; reduce heat to medium. Stir in cheeses. Cook until melted, stirring occasionally. Stir in pasta and reserved chicken mixture. Remove from heat. Pour mixture into baking dish.
  • Bake 20 to 25 minutes or until sauce is bubbly. Sprinkle crushed tortilla chips and green onions on top.

2 pounds boneless chicken breasts, diced
1 tablespoon vegetable oil
1 large tomato, diced
1 green bell pepper, cut into strips
½ large onion, cut into strips
¾ cup water
2 (1.27 ounce) packets fajita seasoning
10 (6 inch) corn tortillas, cut in quarters
1 (16 ounce) can pinto beans, rinsed and drained
2 cups shredded Cheddar cheese
1 (16 ounce) can black beans, rinsed and drained
¼ cup green onions, chopped
¼ cup chopped cilantro

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Grease a 9x13-inch baking pan.
