MAGGIE'S SPICY TUNA SANDWICH

A spicy hot tuna salad sandwich. Serve with a side of soup, salad, fruit. Yummy!

2 (5 ounce) cans tuna in water, drained
1 large ripe tomato, diced
2 tablespoons canned sliced jalapeno peppers with juice
2 tablespoons chopped broccoli
2 tablespoons basil pesto
1 clove garlic, minced
1 teaspoon chopped fresh chives
⅛ teaspoon cayenne pepper
salt and ground black pepper to taste
2 tablespoons seasoned croutons
4 large lettuce leaves
1 tomato, sliced
8 slices whole wheat bread

Steps:

  • Mix tuna, diced tomato, jalapeno with liquid, broccoli, pesto, garlic, chives, and cayenne pepper in a bowl. Season to taste with salt and pepper. Mix well and top with seasoned croutons.
  • Assemble sandwiches by layering lettuce leaves, sliced tomato, and tuna mixture between sliced bread.

Grilled Tuna Burgers with Spicy Mayo image

1 tablespoon toasted sesame oil
1 tablespoon low-sodium soy sauce
1/4 teaspoon crushed red pepper flakes
1 egg, lightly beaten
1 pound sushi-grade tuna, finely diced
1/4 cup finely diced red bell pepper
2 scallions, finely sliced
Kosher salt and freshly ground black pepper
1/2 cup panko breadcrumbs
Vegetable oil, for cooking
4 seeded hamburger buns, split
Spicy Sriracha Mayo, recipe follows
4 medium butter lettuce leaves
1 beefsteak or heirloom tomato, sliced
Dry Riesling, for serving
1 cup mayonnaise
1/2 cup sour cream
1 1/2 tablespoons Sriracha
1 teaspoon lemon juice
1 teaspoon honey
4 grilled scallions, chopped
Kosher salt and freshly ground black pepper

Steps:

  • Add the sesame oil, soy sauce, red pepper flakes and egg to a large mixing bowl. Mix well, then fold in the tuna, red bell pepper and scallions. Mix well to coat everything evenly. Sprinkle with salt and fold in the panko breadcrumbs to lightly bind everything. Carefully form the mixture into 4 even-size patties and set on a platter. Refrigerate so the patties firm up and hold their shape when cooked, 15 to 20 minutes.
  • Heat a large nonstick skillet over high heat. Coat the pan with a little vegetable oil and cook the tuna patties 3 minutes per side (when done, the patties will be browned on the outside and medium-rare in the center).
  • Grill the hamburger buns over high heat until well charred and crispy.
  • Serve the tuna burgers slathered with the Spicy Sriracha Mayo, lettuce leaves and tomato slices on the toasted, seeded hamburger buns, paired with the dry Riesling.
  • Combine the mayonnaise, sour cream, Sriracha, sesame oil, lemon juice, honey and scallions in a large mixing bowl. Stir well to combine, season with salt and pepper and place in the refrigerator until ready to serve.

1 caneed tuna
6 cheddar cheese, slices
2 preserved jalapeno peppers
10 kalamata olives
2 tablespoons mayonnaise
butter
4 cherry tomatoes
1 pinch dried thyme
1 pinch pepper
1 pinch salt
chopped parsley (personally I prefer coriander, but you parsley goes just as well) or coriander (personally I prefer coriander, but you parsley goes just as well)
1 bun (it can be whole wheat or just plain white flour)

Steps:

  • First drain the tuna well, then chop the cheddar in to small cubes (it melts easier this way). Chop the peppers and olives roughly. Slice the tomatoes and mix with thyme in a small bowl. Mix the tuna, cheddar,jalopeno peppers,olives,salt and pepper well, put aside. Turn your oven on to the grill option.
  • Cut the bun in 2 halves and cut the crust of the top halve, so that it stands strait, spread butter on both sides of each halve of the bun, and a tablespoon of mayonnaise on one side of each halve,then spread the tuna mixture on each halve, add the tomatoes, and put under an oven grill,for about 5 to 10 minutes.
  • Meanwhile chop the parsley or coriander and set aside.
  • After the cheese has melted well and the tomatoes are a little bit baked get the sandwiches out of the oven and let cool slightly, to finish garnish with chopped parsley. Enjoy! :))))).

Years ago, there was a deli in the town I worked and everyday faithfully, I would stop there for the Tuna sandwich (which was the best ever!) I became friends with the older lady that always worked the deli and she gave me the recipe. I will never forget what she told me.."The more colors in your Tuna, the better the flavor" sadly, the deli went out of business, but I never forgot her recipe. This tuna has lots of veggies in it, but if you dice them very small, it's so good! Remember, Tuna is a finicky meal.. too much mayo makes it watery and too little makes it dry and fishy.. be sure to use your best judgement and liking. (This recipe makes a lot) you can lessen it

2 (12 ounce) cans of solid albacore tuna (in water)
1 small green bell pepper (finely diced)
1 small red bell pepper (finely diced)
1 small onion (finely diced)
1 celery (finely diced)
2 medium sized dill pickles (finely diced)
4 tablespoons mayonnaise (heaping, use a regular kitchen tablespoon)

Steps:

  • Drain tuna very well and add to large bowl
  • dice all of the above very small as indicated and add to tuna.
  • I add about 3 -4 heaping kitchen sized tablespoons of Mayo into the tuna you may have to add a little more or a little less based on your preference
  • add a few shakes of black pepper and salt (opt).
  • Chill in airtight container in fridge. The longer you let it chill, the better the flavor. This can be served on pretty much any kind of bread. My personal favorite, onion rolls or seedless rye!
