1 medium red onion, cut lengthwise into 1/2-inch-thick wedges
3/4 pound cherry tomatoes
6 tablespoons olive oil, divided
4 (6-ounces) skinless mahimahi fillets (1 inch thick)
1 tablespoon red-wine vinegar
2 teaspoons black or green tapenade (olive paste)
Accompaniment: plain or parmesan couscous

Steps:

  • Preheat broiler and line a large shallow baking pan with foil.
  • Toss onion and tomatoes with 3 tablespoons oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper in lined baking pan, then spread evenly in one half of pan.
  • Pat fish dry and sprinkle with 1/4 teaspoon each of salt and pepper, then arrange, skinned side down and spaced apart, next to vegetables in other half of pan. Drizzle fish with 1 tablespoon oil and broil 4 to 6 inches from heat until vegetables are charred and slightly wilted and fish is just cooked thourough, 12 to 15 minutes.
  • Meanwhile, whisk together vinegar, tapenade, 1/4 teaspoon pepper, and remaining 2 tablespoons oil.
  • Serve fish and vegetables over couscous. Stir pan juices into vinaigrette and drizzle on top.

1/4 cup extra virgin olive oil
1 ounce pancetta, diced
1/4 teaspoon finely minced garlic
1/4 teaspoon finely minced shallot
1/4 cup balsamic vinegar
6 large basil leaves, julienned
3 Maui onions, julienned
6 large rip Kula beefsteak tomatoes
6 cups washed and torn baby mixed greens
6 sprigs fresh basil, for garnish

Steps:

  • Make vinaigrette: heat the olive oil in a large saute pan and saute the pancetta, garlic and shallot over medium-high heat for 1 minute. Remove from the heat and stir in the vinegar and half of the basil. Add the onions and return to the heat for about 30 seconds. Remove from the heat and stir in the remaining basil.
  • Core the tomatoes; cut a slice off the tops and bottoms and discard. Cut each tomato into 3 thick slices. Try and keep the slices in order!
  • To assemble: place a bottom tomato slice on each serving plate. Place a layer of the greens on top of the tomato, using up about half the greens. Place a layer of the onions and a little of the vinaigrette over the greens, and then the center tomato slice. Add another layer of the greens (use the rest), onions (save some for garnish) and top with the last slice of tomato. Garnish with onion and a basil sprig.

1 pound mahimahi fillets, cut into 2-ounce strips
Salt and freshly ground black pepper
2 to 3 tablespoons olive oil
Poblano Mashed Potatoes, recipe follows
Tomato-Cumin Relish, recipe follows
5 large baking potatoes, quartered
1 cup hot milk
4 tablespoons butter
1 roasted poblano
3 scallions, sliced
1/4 cup chopped cilantro leaves
1/4 cup chopped parsley leaves
1/2 cup spinach leaves
1/3 cup lime juice
Salt and pepper
1 cup very ripe diced red tomatoes
1 cup very ripe diced yellow tomatoes
1/2 cup 1/4-inch dice red onion
1/2 cup sliced scallions
Olive oil
1 tablespoon ground cumin

Steps:

  • Season both sides of fish. Heat a large saute pan, and then add the olive oil. When oil is hot, add mahimahi pieces, skin side down. After 3 minutes, turn strips over and cook for another 3 minutes. Place fish over the Poblano Mashed Potatoes and spoon Tomato-Cumin Relish on top to plate.
  • Boil potatoes until tender. Rice potatoes and then, with a whisk, incorporate milk and butter. Puree poblano, scallions, cilantro, parsley, spinach and lime juice in a blender. Add mixture to potatoes and combine. Season to taste.
  • Combine tomatoes, onion, and scallions. Coat with olive oil. Add cumin. Season, to taste.

3 tablespoons olive oil
1 large onion, halved lengthwise, then thinly sliced crosswise
3 tablespoons water
1/2 teaspoon black pepper
3 tablespoons unsalted butter
3 tablespoons capers (in brine), rinsed, drained, and coarsely chopped
2 1/2 tablespoons fresh lemon juice
4 (6-oz) pieces mahimahi fillet (1 1/2 to 2 inches thick) with skin
3/4 teaspoon salt
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Heat 2 tablespoons oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then sauté onion, stirring frequently, until golden, about 6 minutes. Stir in water and 1/4 teaspoon pepper and cook, stirring, until onion is softened, about 1 minute. Stir in butter until melted, then stir in capers and lemon juice. Remove from heat and keep warm, covered.
  • Preheat broiler.
  • Pat fish dry, then brush all over with remaining tablespoon oil and sprinkle with salt and remaining 1/4 teaspoon pepper. Put fillets, skin sides down, on rack of a broiler pan and broil about 5 inches from heat until just cooked through, 6 to 8 minutes.
  • Serve fish topped with onion mixture and sprinkled with parsley.

10 tablespoons olive oil, divided
1/4 cup minced garlic, divided (about 10 cloves)
3 tablespoons chopped fresh oregano
3/4 teaspoon salt, divided
1/2 teaspoon fresh ground pepper, divided
4 (6 ounce) mahi mahi steaks
1 cup mixed olives in brine, pitted (such as kalamata, picholine, and niçoise)
1/4 cup chopped fresh chives
2 shallots, thinly sliced
3 tablespoons chopped fresh thyme

Steps:

  • Combine 2 tablespoons olive oil, 2 tablespoons garlic, and oregano in a small bowl. Stir in 1/2 teaspoon salt and 1/4 teaspoon pepper. Rub fish with oregano mixture. Cover and chill 1 hour.
  • Meanwhile, soak olives in cold water 30 minutes. Drain, and soak in cold water 30 additional minutes. Drain. Chop olives and set aside.
  • Place 4 tablespoons oil and chives in a blender; process until combined. Strain chive mixture through cheesecloth into a small bowl, if desired, and set aside.
  • Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add shallots; sauté 2 minutes. Stir in remaining 2 tablespoons garlic, thyme, and olives; cook 3 minutes or until heated. Stir in remaining 1/4 teaspoon salt and remaining 1/4 teaspoon pepper. Remove from heat; cover and keep warm.
  • Heat remaining 2 tablespoons oil in a large skillet over medium-high heat until hot. Sauté fish, skin side up, 3 to 5 minutes. Turn, and sauté 4 to 5 minutes, or until fish flakes with a fork. Place fish on individual serving plates. Spoon olive mixture evenly over steaks, and drizzle with chive mixture. Serve immediately.
