3 Cups Warm Water (approximately 110 degrees)
1 Tablespoon Active Dry Yeast
2/3 cup Honey
1/3 cup Oil (plus a little extra for hands)
7 1/2 cups Whole Wheat Flour (may use half whole wheat/half white flour)
1 Tablespoon Salt
Butter (to spread on top of bread)

Steps:

  • Heat oven to warm about 200 degrees.
  • Place warm water in large mixing bowl. Add yeast and stir. Stir in honey and let proof (start to form a creamy foam) for 5 minutes.
  • Add oil, flour, and salt. Begin by adding 7 cups of flour. Start to mix using the dough hook. Add remaining 1/2 cup of flour until dough pulls away from sides of mixing bowl. Using Bosch or Kitchenaid, knead for 10 minutes at medium-high speed. If you don't own a stand mixer, you can knead by hand.
  • Place a little oil on hands and shape into two bread loaves. Spray loaf pans with non-stick cooking spray. Put pans in a warm oven to let rise until double -- about 20 minutes.
  • Once bread has raised, turn oven to 350 degrees. Leave bread in oven and set timer for 25 minutes.

1/2 cup warm water
7 1/2 cups hot tap water
18 cups whole wheat flour (or 12 cups whole wheat flour and 6 cups white flour)
1 cup oil
1 cup honey
3 tablespoons salt
1 cup potato flakes or 1 cup oatmeal, for moisture

Steps:

  • Sprinkle yeast into 1/2 cup warm water, let stand 10-15 minutes. (Add 1 tsp sugar to help it work faster.
  • Combine hot water and 10 cups whole wheat flour in mixer. Mix on low speed until well blended.
  • Add salt, oil, and honey. Continue to mix until well blended.
  • Add 2 more cups of wheat flour and oatmeal and/or potato flakes, blend thoroughly.

This is the Bosch master recipe for freshly ground whole wheat bread. My kids never used to eat the crust. Now they do! :) I have done some experimenting with this to get a more firm loaf. I think I finally have it. So the recipe is adjusted, based on my tinkering. Minimum rising time included in prep time. The original recipe is from Phyllis Stanley, a Bosch consultant. She also recommends using saved potato water for the water and pureeing any leftover veggies as part of the water. Adds more nutrition and some taste. NOTE: If you don't use freshly ground flour, you will probably have to adjust the flour amounts.

  • Put ingredients in the Bosch bowl in order listed.

  • It should only pull initially half way up the side of the bowl, and during the 5 minutes, it will completely pull away.
  • Turn oven on to 375° and oil your hands and counter well, spraying 4-5 loaf pans with cooking spray or oil.
  • Divide the dough between the loaf pans and let rise for approximately 30 to 45 minutes. They will rise more in the oven.

2/3 cup vegetable oil (or canola, both work great)
2/3 cup honey
2 Tablespoons SAF yeast (requires no pre-dissolving)
2 Tablespoons salt

Steps:

  • If grinding your own wheat, begin there (I use a hard white winter wheat, but red wheat is good too. Grinding the wheat using a NutriMill only takes about 4 minutes and it only has one ingredient: wheat!).
  • With dough hook in place on your Bosch mixer, place water, dough enhancer, gluten, oil, honey, yeast, and 6 cups flour in the bowl. On the Bosch mixer, flip the switch over to "M" to incorporate.
  • Add another 7-8 cups of flour and salt and turn the speed on the mixer to "1".
  • Continue adding flour 1/2 cup at a time until dough cleans the edges of the bowl (takes just a minute or two).
  • Continue kneading dough on speed "2" for another 6-8 minutes.
  • Oil your hands and lightly oil a spot on a clean surface. Divide the dough into six equal portions and shape into loaves.
  • Put loaves into greased pans and let rise until double in size (about 20 minutes).
  • Bake at 350 degrees for 30-40 minutes (internal temperature should be about 195 degrees and the outside will be nice and golden).
