GRILLED BEER BRATS WITH PEPPERS AND ONIONS

Provided by Guy Fieri

Categories     main-dish

Time 45m

Yield 6 to 8 servings

Number Of Ingredients 16

2 tablespoons canola oil, plus more for oiling the grill
6 strips applewood-smoked bacon, diced
1 sweet onion, sliced
1 large green pepper, seeded, sliced
1 large red pepper, seeded, sliced
2 cloves garlic, minced
Two 12-ounce cans lager beer
1 cup low-sodium chicken stock
2 sprigs fresh thyme
1 bay leaf
1 sprig fresh rosemary
2 pounds fresh bratwurst sausages (about 12 links)
1/2 cup whole-grain mustard
2 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
2 to 3 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Heat the oil in a large, deep saute pan or Dutch oven set over medium-high heat. Add the bacon and cook until browned and crispy, 3 to 5 minutes. Add the onions, the green and red peppers and the garlic and cook for another 4 to 5 minutes, or until the peppers are wilted and lightly browned. Add the beer, chicken stock, thyme, bay leaf and rosemary and deglaze the pan. Prick holes in the brats with a fork or skewer to prevent them from bursting during cooking. Add the brats to the pan, reduce the heat and simmer gently for 15 to 17 minutes, turning the brats halfway through.
  • Preheat a grill or cast-iron griddle to medium-high heat.
  • Remove the brats from the pot; let the braising liquid continue to simmer and reduce. Pat the brats dry with paper towels, then score them diagonally, making 3 or 4 shallow incisions on either side (this will ensure plenty of crispy edges when grilled). Brush the grill lightly with oil and grill the brats for 2 to 3 minutes per side, or until well-marked.
  • When the braising liquid has reduced to the consistency of a sauce, remove it from the heat and stir in the mustard and butter. Taste and adjust the seasoning with salt and pepper.
  • To serve, spoon some of the braising sauce, along with the peppers and onions, onto a platter. Set the grilled brats on top and drizzle with the remaining sauce. Garnish with chopped parsley and serve.

Make Ahead Grilled Brats and Beer Wisconsin Style image

These are great to make ahead for cookouts or tailgating. Especially if you need the grill for other foods. They can be reheated in a foil pan on the grill, in the oven or in a crock pot. They can be made a day ahead, the morning of, or served right away. You need fresh bratwurst for this, not the smoked or white colored sausage. We've already made 100 of these ahead for large groups.

SHEBOYGAN GRILLED BRATS

Sheboygan Grilled Brats image

Growing up on a lake in the Sheboygan area, this was a standard way that the German folks would grill their brats. We always served them on the old-fashioned hard rolls. By finishing them in the beer sauce they just get better and better. Though it's expensive, on special occasions I use a dark beer which is not German at all: Guinness Irish Stout. Around our house, we eat them with ketchup and mustard, and the cooked onions from the brat sauce.

DO-AHEAD SHEBOYGAN "BRATS"

Do-Ahead Sheboygan

Categories     Beer     Marinate     Sausage     Summer     Oktoberfest     Tailgating     Grill     Grill/Barbecue     Gourmet

Yield Serves 6

Number Of Ingredients 9

12 uncooked bratwursts
two 12-ounce bottles of beer (not dark)
1 stick (1/2 cup) butter, melted
2 large onions, chopped
6 hard rolls, halved and well buttered
Accompaniments:
sliced or chopped onions
sliced dill pickles
Bavarian mustard, and/or ketchup

Steps:

  • Prepare grill.
  • Grill bratwursts on an oiled rack set 5 to 6 inches over glowing coals, turning occasionally, until cooked through and dark golden brown, about 20 minutes.
  • While bratwursts are cooking, in a 3-quart saucepan heat beer, butter, and onions, stirring occasionally, until warm. Keep marinade warm over low heat.
  • Transfer grilled bratwursts to pan and let stand in marinade until ready to serve 15 to 20 minutes.
  • Remove bratwursts from marinade with tongs. Put a pair of "brats," cut in half lengthwise and stacked on each roll.
  • With a slotted spoon put onions from marinade on brats.
  • Apply your chosen accompaniments to brats.

Tips:

  • Choose the right brats: Look for fresh, plump brats with a good amount of marbling. Avoid brats that are too thin or pale, as these will be dry and flavorless.
  • Preheat your grill to medium-high heat: This will help to sear the brats and prevent them from sticking to the grill.
  • Grill the brats for 10-12 minutes, turning them every few minutes: This will ensure that the brats are cooked through evenly.
  • Let the brats rest for 5 minutes before serving: This will allow the juices to redistribute throughout the brats, making them more tender and flavorful.
  • Serve the brats with your favorite toppings: Some popular options include sauerkraut, onions, mustard, and relish.

Conclusion:

Grilled brats are a delicious and easy-to-make summertime meal. By following these tips, you can make sure that your brats are cooked perfectly and bursting with flavor. So fire up your grill and enjoy a classic Wisconsin-style bratwurst!
