1 packet taco seasoning (or homemade)
2/3 cup water
1 Tablespoon oil
20 corn tortillas
1 16 oz can refried beans
1 10 oz can red enchilada sauce
2 cups shredded cheddar cheese
1 roma tomato (, diced)
1 small can sliced olives
3 green onions (, chopped)

Steps:

  • Cook ground beef, crumbling it into small pieces with a wooden spoon as it cooks. Remove any grease.
  • Add taco seasoning and water and stir to combine.

1 prebaked 12-inch thin pizza crust

This fabulous and easy Mexican pizza recipe uses a pork, onion, and taco sauce mixture for great taste, and is topped with shredded cheeses.

1 pound ground pork (or chorizo sausage , raw)
1 onion (chopped)
2 garlic cloves (minced)
1 tablespoon olive oil
1 (16-ounce) bottle taco sauce
1 (8-ounce) can tomato sauce
1 tablespoon chili powder
1/8 teaspoon cayenne pepper
1/4 teaspoon pepper
1 (4-ounce) can green chilies (drained)
2 (13.8-ounce) cans pizza dough (or enough pizza dough for 2 pizzas)
Cooking spray
4 cups Colby-Jack cheese (or Monterey Jack cheese, shredded)

Steps:

  • Gather the ingredients.
  • Preheat the oven to 400 F. Arrange the racks in the oven so they evenly divide the oven into thirds. You'll use both racks, rotating and moving the pizzas around as they cook.
  • In a large skillet, cook the pork with onion and garlic in olive oil over medium heat until the meat is browned, stirring to break up with a fork. Drain if necessary. If you are using chorizo, cook the onions until they are tender and then add the chorizo, cooking for a few minutes until the fat is rendered and the meat is well browned.

  • Bake at 400 F for 20 to 25 minutes until cheese is melted, bubbly, and begins to brown. Halfway through the cooking time, swap the cookie sheets so they each have time on the upper and lower baking racks. This will help ensure an even bake on both pizzas. Make sure that the crusts are browned on the bottom and the pizzas have cooked evenly.
  • Slice, serve, and enjoy.

1 pound ground beef
1 (1.25 ounce) package taco seasoning mix
1 tablespoon vegetable oil
4 (6 inch) corn tortillas
8 ounces shredded Cheddar cheese
8 tablespoons sour cream
2 roma (plum) tomatoes, chopped
2 green onion, chopped
1 (4 ounce) can diced green chiles, drained
½ avocado, diced
1 tablespoon black olives, sliced

Steps:

  • Heat the refried beans.
  • In a large skillet, brown the ground beef. Stir in the seasoning packet.
  • Preheat oven to 350 degrees F (175 degrees C).

1-1/4 to 1-1/2 cups all-purpose flour
1/3 cup cornmeal
1 package (1/4 ounce) active dry yeast
1 teaspoon salt
1/8 teaspoon sugar
1/4 cup water
1/4 cup fat-free milk
2 tablespoons olive oil
TOPPING:
1 cup salsa
3/4 cup canned black beans, rinsed and rained
2 cups cubed cooked chicken breast
1 small onion, thinly sliced
1 can (4 ounces) chopped green chilies
2 cups shredded reduced-fat Mexican cheese blend
1 medium tomato, seeded and chopped
1 jalapeno pepper, seeded and chopped
1 tablespoon minced fresh cilantro

Steps:

  • In a bowl, combine 1/2 cup flour, cornmeal, yeast, salt and sugar. In a saucepan, heat water, milk and oil to 120°-130°. Add to dry ingredients; beat until smooth. 2 cups monterey jack cheese
2 cups chicken or 2 cups beef
1 (4 ounce) can chilies
2 jalapenos or 2 chipotle chiles in adobo, diced
1 can pitted black olives, sliced (or green if you like)
2 thinly sliced tomatoes
1 cup salsa
1 small red onion, sliced into thin rings
2 teaspoons milk
1 container sour cream, milk whisked in
guacamole
cilantro

  • Preheat oven to 400F degrees.
  • Pull out a cookie sheet and lay out four tortillas.

1 (16-ounce) can black bean refried beans
1 teaspoon taco seasoning
1/2 teaspoon kosher salt
1 cup salsa, more if needed
2 cups shredded cheese
1 1/2 cup cooked meat (I used shredded rotisserie chicken)
Optional toppings: tomatoes, sliced olives, diced avocado, sour cream, chopped cilantro

Steps:

  • Pre-heat the oven to 400°F. Line a baking sheet with foil or use a pizza pan. Place the tortillas on the pan and warm them in the oven for 3 minutes.
  • While the tortillas are cooking, heat the beans in a small sauce pan over medium-low heat for 2 to 3 minutes. Stir in 3 Tablespoons of salsa, taco seasoning and salt. Add more salt and pepper to taste.
  • Remove tortillas from the oven and spread the beans onto the top side of 5 tortillas. Sprinkle with cheese, add meat if desired and then top with another tortilla. Spread salsa on top of the tortilla and then add cheese. Bake for 5 to 7 minutes, or until the cheese is melted and bubbly.
  • Top with fresh ingredients such as tomatoes, sliced olives, diced avocado, sour cream, chopped cilantro and then cut into 4 slices.
