1 package fudge brownie mix (13-inch x 9-inch pan size)
1 cup chopped pecans
3 cups miniature marshmallows
1/2 cup milk
1/2 cup butter, cubed
2 ounces unsweetened chocolate
3-3/4 cups confectioners' sugar
1/2 teaspoon vanilla extract

Steps:

  • Prepare brownie mix according to package directions for fudge-like brownies; stir in pecans. Spread batter into a greased 13x9-in. baking pan. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Sprinkle with marshmallows. Cool on a wire rack., In a saucepan, combine the milk, butter and chocolate. Cook and stir over low heat until smooth. Transfer to a bowl; beat in confectioners' sugar and vanilla until smooth. Spread over marshmallows.

My son's favorite ice cream flavor lately is Rocky Road so I thought I'd make a brownie to echo those flavors of chocolate fudge, marshmallows and almonds. Making them one bite in a mini-muffin tin makes them super easy to snack on or pack in a lunchbox. They're also great to make for any group you may have to prepare for -- like your turn for soccer snack or a school party. You may want to leave the nuts out to accommodate allergies if sending them to school, though.

1/2 cup butter
4 ounces unsweetened chocolate, chopped
2 eggs
1 cup sugar
1 teaspoon vanilla
1/4 teaspoon salt
1/2 cup all-purpose flour
1/4 cup blanched almonds, chopped or slivered almonds
24 mini-marshmallows

Steps:

  • Preheat oven to 350 degrees F.
  • Over hot water in a small bowl, melt the butter and chocolate together. Let cool to almost room temperature while you prepare the rest of the recipe.
  • In a mixer or with a whisk, whip the eggs with the sugar until fluffy. Stir in the vanilla and salt with a wooden spoon. Add the melted chocolate mixture and stir. Add the flour and stir in only until incorporated. Add nuts and mix briefly.

1 cup (2 sticks) margarine (you can use butter, but they don't turn out quite as fudgy), melted
2 cups sugar
4 eggs
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 cup nuts (optional)
pinch of salt
1 cup milk chocolate chips
1 cup chopped nuts (I used walnuts, but any nuts will do)
1 (10 oz) bag mini marshmallows
1/4 cup butter
1 cup powdered sugar
1 1/2 teaspoons cocoa powder

Steps:

  • Preheat oven to 325 degrees.
  • Spray a 9x13" baking pan with non-stick cooking spray. Stir cocoa and melted margarine together in a bowl.
  • Add sugar and eggs and mix well.
  • Add vanilla, flour, nuts and salt. Bake for about 20-25 minutes. Remove brownies from oven and top with chocolate chips, marshmallows, and chopped nuts.
  • Place back in the oven for about 3 minutes, or until the marshmallows double in size. Remove from oven and let cool. Top with chocolate drizzle (completely optional) and serve.

  • Preheat oven to 350 degrees. Butter an 8-inch-square baking pan. Line bottom with parchment paper, leaving an overhang on two sides; butter paper.

Steps:

  • Preheat oven to 350°F and line a 9-inch square baking pan with nonstick tin foil, crimping to create a 4" 'collar'. Spray with nonstick cooking spray.
