This is one curry u dont want to miss. Its one of the few really yummy curries Subru uncle makes for us. The last 3 days, this has been my addiction. Be it lunch/ midnight, if I'm not on my chair or exercising or asleep or outisde shoping, etc, I'm right in front of the fridge, hunting for this curry! Even a drop is an ocean, I love this curry that much:)

Number Of Ingredients 12

3 mangoes, washed,peeled and diced,retain seeds
2 teaspoons turmeric powder
750 g low-fat yogurt, beaten
1 3/4 teaspoons salt
1/2 teaspoon red chili powder
3 -5 curry leaves, washed
2 green chilies, slit in between
1 cup water
2 teaspoons oil
1 teaspoon mustard seeds
1 teaspoon methi seeds
1 teaspoon cumin seed

Steps:

  • Put the mangoes in a skillet alongwith the whole seeds of the mangoes.
  • Add the curry leaves, green chillies and water.
  • Add salt, turmeric powder and red chilli powder.
  • Bring to a boil.
  • Cook on high flame for 8-10 minutes.
  • Remove from flame and keep aside.
  • Heat oil in a non-stick saucepan.
  • Add the mustard seeds and allow to crackle.
  • Add methi seeds and allow to sizzle.
  • Add the cumin seeds and allow to splutter.
  • Add few curry leaves and stir-fry for a few seconds.
  • Remove from heat.
  • Pour into curry.
  • Stir well.
  • Allow to cool for about 30 minutes on the kitchen counter.
  • Then, stir in the beaten yogurt.
  • Mix it well and serve with cooked white Basmati rice.
  • This is one lunch that you will eat licking your fingers and enjoying every morsel, I PROMISE!

1 tablespoon vegetable oil
½ pound skinless, boneless chicken breast, cubed
½ cup chicken stock
1 tablespoon soy sauce
1 tablespoon cider vinegar
1 ½ tablespoons brown sugar
1 teaspoon curry powder
1 tablespoon cornstarch
½ onion, diced
1 green bell pepper, sliced
1 red bell pepper, sliced
2 teaspoons minced fresh ginger root
1 mango, peeled and cubed

Steps:

  • Heat vegetable oil in a large skillet over medium-high heat and stir in the chicken breast. Cook the chicken breast until no longer pink in the center. Transfer cooked chicken to a plate. Meanwhile, whisk together the chicken stock, soy sauce, vinegar, brown sugar, curry powder, and cornstarch. Set aside.
  • Using the same skillet, cook and stir the onion over medium heat until the onion has softened and turned translucent, about 5 minutes. Stir in the green and red bell peppers and cook for 2 minutes, then add the ginger and cook for another minute. Stir in the chicken stock mixture and the cooked chicken breast. Cook until the sauce has thickened. Drop mango in and cook until the mango is heated through.

This healthier version of a traditional Maldivian curry recipe is full of rich flavors from dried fish, ripe mangoes, and curry leaves. Serve with rice or roshi (flatbread). If you leave out the dried fish, this curry is vegan.

2 tablespoons oil
1 medium red onion, chopped
3 serrano peppers, halved
5 cloves garlic, minced
1 teaspoon grated ginger root
1 piece cinnamon bark
10 fresh curry leaves
3 whole cloves
½ cup dried Maldivian fish
1 ½ tablespoons chili powder
1 tablespoon curry powder
1 teaspoon turmeric powder
8 mangoes, peeled and chopped
1 cup water
½ cup coconut milk
1 ½ teaspoons salt

Steps:

  • Heat oil in a pan over medium heat. Fry onion, serrano peppers, garlic, ginger, cinnamon bark, curry leaves, and cloves until onions are lightly browned, 3 to 5 minutes. Add dried fish, chili powder, curry powder, and turmeric. toss until evenly combined.
  • Mix mangoes into the pan. Add water and cook until mangoes soften, 10 to 15 minutes. Add coconut milk and season with salt. Simmer 5 to 10 minutes more until flavors are well combined.
