This recipe was one of my husband's favorite ways to enjoy salmon. I've had it so long I don't even remember where it came from originally. This salad is a nice light meal for a hot summer day, and it lets the salmon flavor come through. -Mary Dennis, Bryan, Ohio

EASY SMOKED SALMON PASTA

Easy Smoked Salmon Pasta image

A really quick, easy sauce for 'pasta asciutta,' which means 'dry pasta.' It's not a dish over-loaded with sauce, but one that appreciates the simple smokiness of good smoked salmon. Serve sprinkled with some Parmesan or garnished with some parsley. This is not a creamy, thick sauce. Just one that really brings out the simple, yet fantastic flavors of smoked salmon. Enjoy!

1 (8 ounce) package linguine pasta

1 shallot, minced
1 ounce smoked salmon, cut into small pieces

Stir the salmon, cream cheese, and milk into the shallot mixture. Mix the reserved water from the pasta into the mixture. Transfer to a large bowl and toss with the pasta to serve.

SMOKED SALMON PASTA SALAD

Smoked Salmon Pasta Salad image

This summer I brought home some smoked salmon from our cruise to Alaska as well as the cookbook "Cooking Alaska's Wild Salmon" by Kathy Doogan. I made this recipe from the cookbook using the smoked salmon. It was really delicious. The times noted do not include chill time before serving. (Note, the recipe is slightly adapted to suit our tastes.)

Tips:

  • Use high-quality smoked salmon. This will make a big difference in the flavor of the salad. Look for salmon that is moist and flaky, with a deep pink or orange color.
  • Don't overcook the pasta. It should be cooked al dente, or slightly firm to the bite.
  • Use a variety of vegetables. This will add color, texture, and flavor to the salad. Some good options include cherry tomatoes, cucumbers, red onions, and bell peppers.
  • Make a flavorful dressing. The dressing is what will bring all the flavors of the salad together. A simple vinaigrette made with olive oil, lemon juice, and Dijon mustard is a good option.
  • Garnish the salad with fresh herbs. This will add a pop of color and flavor. Dill, chives, and parsley are all good choices.
