Steps:
- Preheat oven to 350 degrees F.
- Toast the bread crumbs in a dry skillet over medium heat until browned and fragrant, about 1 minute. Transfer to a large mixing bowl and set aside. Add the olive oil, onions, garlic, oregano, salt, and pepper to the skillet and cook until onions are tender, about 8 minutes. Let cool slightly. Add the onions to the bread crumbs along with the meat, cheese, and Worcestershire sauce. Toss and mix gently. Add the eggs and stir to coat the meat completely.
- Transfer to a foil-lined sheet pan and gently press into desired shape. Bake until an instant read thermometer registers 160 degrees F in the center of the loaf, about 45 minutes.
- Tent the meatloaf with foil and let rest for 15 minutes while you make the gravy (or you can make the gravy while the meatloaf is baking).
- Gravy: Cook the onions, garlic, and oregano in the olive oil and butter in a large skillet over medium-high heat until browned, about 6 minutes. Add the tomato paste and bay leaf. Stir until paste turns brick red and garlic is fragrant, about 3 minutes. Add the chicken broth and crushed tomatoes. Bring to a boil over high heat. Reduce heat to maintain a simmer and cook sauce until it thickens, about 5 minutes. Whisk in Parmesan cheese, vinegar, salt, and pepper. Discard the bay leaf and transfer the sauce to a gravy boat. Slice the meatloaf and serve with the gravy.

MAMA'S TOMATO GRAVY
This dish is truly a taste of Louisiana Cajun Country. I mean where folks are already sitting at the table drinking coffee and eating breakfast by the time the rooster crows. Mama made countless batches of biscuits and tomato gravy in her lifetime. I'm sure she learned to make this from her mother: Carmen Inez Shirley. This is the dish that puts my feet back under my mama's table. Serve with love over hot buttermilk biscuits along with bacon or sausage for breakfast, brunch, lunch or dinner.

- Mix together one cup of ketchup, the dried mustard and the brown sugar.
- Spoon over the meatloaf, then bake for 10 more minutes.
- Allow the meatloaf to rest 5-10 minutes before slicing and serving.

Tips:
- Choose the right ground meat: A combination of ground beef and ground pork is a classic choice for meatloaf, but you can also use all beef, all pork, or even a combination of ground turkey and ground chicken. If you're using a leaner meat, like ground turkey, you may want to add some extra fat, such as butter or bacon grease, to keep the meatloaf moist.
- Use fresh, high-quality ingredients: The better the ingredients you use, the better your meatloaf will taste. Make sure your ground meat is fresh and has a good color. Also, use fresh vegetables and herbs, and avoid using canned or processed ingredients.
- Don't overmix the meatloaf: Overmixing the meatloaf can make it tough. Gently mix the ingredients together until they are just combined.
- Shape the meatloaf into a loaf: Use your hands to shape the meatloaf into a loaf shape. Make sure the meatloaf is evenly shaped so that it cooks evenly.
- Bake the meatloaf in a preheated oven: Preheat your oven to the temperature specified in the recipe before you put the meatloaf in the oven. This will help the meatloaf cook evenly.
- Baste the meatloaf with sauce: Basting the meatloaf with sauce during cooking will help keep it moist and flavorful. You can use a simple tomato sauce, or you can make a more elaborate sauce with ingredients like onions, garlic, and mushrooms.
- Let the meatloaf rest before slicing: After the meatloaf is cooked, let it rest for a few minutes before slicing. This will help the juices redistribute and make the meatloaf easier to slice.
Conclusion:
Meatloaf is a classic comfort food that is easy to make and loved by people of all ages. With a few simple tips, you can make a meatloaf that is moist, flavorful, and perfectly cooked. So next time you're looking for a delicious and satisfying meal, give meatloaf a try. You won't be disappointed.
