I modified this recipe to be less oily. It is almost as good as take-out Chinese green beans. It tastes wonderful with ham and a baked yam.

'CHINESE BUFFET' GREEN BEANS

'Chinese Buffet' Green Beans image

Every time my family and I go to a Chinese buffet we make a bee line for the green beans! This is a simple and tasty re-creation of that much loved side dish, goes well with any Asian meal. Make sure to slice the garlic, don't use a garlic press. Oyster sauce can be found in the Asian section of your grocery store, at an Asian grocery store, and online.

Time 30m

Yield 4 servings

Number Of Ingredients 0

Steps:

  • Cook 1 1/2 pounds green beans in salted boiling water until crisp-tender, 2 minutes. Drain and transfer to a bowl of ice water to cool, then drain and pat dry. Whisk 2 tablespoons each sherry vinegar and orange juice, 2 teaspoons dijon mustard and 1/2 teaspoon kosher salt in a large bowl; whisk in 1/4 cup olive oil. Add 1 thinly sliced shallot and let sit 10 minutes. Add the green beans, 2 heads torn frisée, the segments of 2 oranges and 1/3 cup chopped toasted pistachios; season with salt and pepper and toss.

Tips:

  • Choose fresh, vibrant green beans: Look for beans that are a deep green color and snap easily when you bend them.
  • Trim the green beans properly: Cut off the ends of the beans, but leave the strings intact. This will help them retain their crunch.
  • Blanch the green beans before stir-frying: This will help them cook evenly and retain their color.
  • Use a hot wok or skillet: This will help the green beans sear and develop a slightly smoky flavor.
  • Stir-fry the green beans quickly: Overcooking will make them mushy, so cook them for just a few minutes until they are tender-crisp.
  • Add the sauce at the end of cooking: This will prevent it from burning and ensure that the green beans are evenly coated.
  • Serve the green beans immediately: They are best enjoyed hot and fresh.
