2 tablespoons vegetable oil
3 cups fresh mushrooms (sliced)
4 teaspoons flour
1 1/3 cups water
12 ounces frozen orange juice concentrate
1 cup green onion (sliced)
4 chicken bouillon cubes
2 (11 ounce) cans mandarin oranges, drained
2 cups raw rice

Steps:

  • In a extra large skillet, cook mushrooms over medium high, stirring constantly.
  • Sprinkle flour over mushrooms, stirring quickly to combine.
  • Gradually stir in water, orange juice concentrate, green onions and bouillon cubes.

4 skinless, boneless chicken breast halves - pounded to 1/4 inch thickness
2 tablespoons olive oil
2 tablespoons butter
⅓ cup hoisin sauce
⅓ cup orange juice
1 (11 ounce) can mandarin oranges, drained
1 tablespoon chopped green onions
¼ cup chopped cashews

Steps:

  • Place flour in a small bowl. Dredge chicken in the flour to lightly coat.
