This is a great salad that is easy to take to potlucks, but we also make it for home dinners and reduce the quantity of the ingredients; the dressing can keep in the fridge for several uses. It is a little sweet so it is also child pleasing!

Tips:
- Choose ripe and juicy oranges: Look for oranges that are heavy for their size and have a bright, deep orange color. Avoid oranges with blemishes or bruises.
- Use fresh ginger and garlic: Fresh ginger and garlic add a bright, pungent flavor to the dressing. If you don't have fresh ginger or garlic on hand, you can use ground ginger and garlic powder, but the flavor will be less intense.
- Toast the peanuts: Toasting the peanuts brings out their nutty flavor and makes them more crunchy. You can toast the peanuts in a dry skillet over medium heat, stirring constantly, until they are golden brown and fragrant.
- Use a variety of greens: This salad is a great way to use up leftover greens. You can use a mix of baby spinach, arugula, romaine lettuce, or any other type of greens that you like.
- Make the dressing ahead of time: The dressing for this salad can be made ahead of time and stored in the refrigerator for up to 3 days. This makes it a great option for a quick and easy lunch or dinner.
Conclusion:
Mandarin Orange Peanut Salad is full of bright, citrusy, and nutty flavors that offer a delightful twist to the classic green salad. It's healthy, refreshing, and versatile, making it perfect for any occasion. Whether you're looking for a quick and easy lunch or a vibrant side dish for a party, this salad is sure to satisfy your taste buds and leave you feeling satisfied and refreshed.
