Leslie's Featured Recipes, Salads. This simple, flavourful salad is bursting with antioxidants. Use mangos that are slightly firm so they hold their shape when you mix the salad. You can also serve this salad as a salsa paired with grilled fish or chicken.

2 mangos, peeled and diced
1/2 red onion, thinly sliced
1/4 cup (50 ml) red bell peppers, thinly sliced
16 cashews
1/2 cup (125 ml) cilantro, finely chopped
2 tbsp (25 ml) freshly squeezed lime juice
1/8 tsp (1/2 ml) red pepper flakes

Steps:

The recipe came from a cookbook called Vegan Eats World by Terry Hope Romero. It's a compilation of vegan versions of international recipes.

2 tablespoons lime juice
1 tablespoon light brown sugar (or palm sugar)
1/4 teaspoon salt
1 pinch white pepper
1 ripe avocado, diced into cubes
1 ripe mango, peeled and diced
1 medium red onion, chopped small
1 cup chopped fresh cilantro
1 tablespoon chopped of fresh mint
1 small hot green chili pepper (Thai or Serrano)
1/4 cup chopped roasted, unsalted cashews

Steps:

  • In a large mixing bowl whisk together lime juice, brown sugar, salt and white pepper. Add the cubed avocado and toss to coat. Now add the mango, red onions, cilantro, mint, chile and chopped cashews to the bowl.
  • Use a wide rubber spatula to thoroughly stir the salad making sure the avocado and mango are coated with the lime dressing.
  • Enjoy immediately.

3 tablespoons fresh lime juice
3 tablespoons rice vinegar or 1 tablespoon white wine vinegar
1 teaspoon paprika
1 teaspoon sugar
1/4 teaspoon cayenne pepper
1 10-ounce bag mixed baby lettuces
1 cup diced peeled jicama
1/2 cup salted roasted cashews

Steps:

  • Combine 1/2 cup mango with next 6 ingredients in blender. Puree until smooth. Season dressing with salt and pepper. Transfer to small bowl. (Can be made 3 hours ahead. Cover; let stand at room temperature.)
