MANGO CHICKEN

This is an old "Canadian Living" Recipe that has become a family favourite. We all love it, and sometimes I increase the amount of curry paste, depending on who is coming for supper! I normally make it with a pot of rice and a salad. It's a nice "different" dish when you have company. Everyone seems to love it!

Number Of Ingredients 18

1 teaspoon ground cumin
½ teaspoon curry powder
1 tablespoon distilled white vinegar
1 tablespoon balsamic vinegar
1 tablespoon olive oil
¼ cup brown sugar
1 pinch salt and ground black pepper, or to taste
4 chicken drumsticks
2 tablespoons butter
1 large mango, peeled, seeded, and sliced - divided
1 tablespoon Dijon mustard
1 clove garlic, crushed
1 teaspoon crushed red pepper flakes
2 small onions, sliced - divided
¼ cup white sugar
¼ cup brown sugar
1 bunch mustard greens, washed and chopped
¼ cup raisins

  • Place the cumin, curry powder, white and balsamic vinegar, olive oil, 1/4 cup brown sugar, salt, and black pepper into a resealable plastic bag, and smush the bag several times with your fingers to combine and mix all ingredients. Place the chicken drumsticks into the bag, and knead the bag again with your fingers to coat the chicken in seasonings.

STIR-FRIED CHICKEN WITH MANGO AND PEPPERS

Stir-Fried Chicken With Mango and Peppers image

This is from HeartSmart Chinese Cooking, by Steven Wong. Every single recipe in this book is delicious, and since I can't post them all, you should just buy it. The recipes are great because they taste authentically Asian, but are a lot lower in fat and salt than a lot of traditional recipes. Prep time includes marinating time. Can be served over rice, but I find it's a filling meal in itself.

Tips:

  • Choose the right mangoes. For this recipe, you want to use mangoes that are ripe but still firm. Avoid mangoes that are too soft or mushy, as they will not hold their shape during cooking.
  • Cut the mangoes properly. To cut a mango, first slice it in half lengthwise. Then, use a sharp knife to score the flesh of the mango in a criss-cross pattern. Be careful not to cut through the skin of the mango.
  • Use a hot skillet. When cooking the chicken, make sure the skillet is hot before adding the chicken. This will help to sear the chicken and prevent it from sticking to the pan.
  • Don't overcrowd the skillet. When cooking the chicken, don't overcrowd the skillet. This will prevent the chicken from cooking evenly.
  • Cook the chicken until it is cooked through. To ensure that the chicken is cooked through, cook it until the internal temperature reaches 165 degrees Fahrenheit.
  • Add the greens at the end. The greens should be added to the skillet at the end of the cooking process. This will help to prevent them from becoming overcooked.
  • Serve immediately. Mango chicken with greens is best served immediately. This will help to ensure that the chicken is juicy and the greens are still crisp.

Conclusion:

Mango chicken with greens is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of sweet mangoes, savory chicken, and crisp greens is sure to please everyone at the table. With a little planning, you can have this dish on the table in under 30 minutes.
