Time 30m

Yield 2 1/2 cups

Number Of Ingredients 9

2 1/2 cups diced mangos
1 (1-inch) piece peeled fresh ginger
1 Scotch bonnet pepper, minced
1 clove garlic, minced
1/4 teaspoon kosher salt
1/2 cup cider vinegar
1/2 cup firmly packed light brown sugar
1/2 cup raisins
Freshly ground black pepper

Steps:

  • Place all ingredients in a medium saucepan. Bring to a boil, reduce heat to low, and simmer until thick, about 25 minutes, stirring often to keep from sticking. Let cool, and store in an airtight container.

Tips:

  • Use ripe mangoes: Choose ripe mangoes that are slightly soft to the touch and have a sweet aroma. This will ensure that your chutney has a rich, flavorful taste.
  • Peel and cut the mangoes properly: Peel the mangoes and cut them into small pieces. This will help them cook evenly and absorb the flavors of the other ingredients.
  • Use a variety of spices: Feel free to experiment with different spices to create a chutney that suits your taste. Common spices used in Caribbean mango chutney include ginger, garlic, cumin, turmeric, and chili powder.
  • Cook the chutney over low heat: Bring the chutney to a boil, then reduce the heat to low and simmer for at least 30 minutes. This will allow the flavors to develop and the chutney to thicken.
  • Store the chutney properly: Store the chutney in a clean, airtight container in the refrigerator for up to 2 weeks. You can also freeze the chutney for up to 6 months.

Conclusion:

Caribbean mango chutney is a delicious and versatile condiment that can be enjoyed in many different ways. It is a great addition to grilled or roasted meats, fish, and vegetables. It can also be used as a marinade or dipping sauce. No matter how you choose to enjoy it, Caribbean mango chutney is sure to add a burst of flavor to your meals.
