2 tablespoons packed light brown sugar
Pinch of chipotle chile powder
Kosher salt and freshly ground black pepper
1 pound skirt steak, trimmed and cut into 4 equal portions
1 clove garlic
2 tablespoons coarsely chopped fresh cilantro
1 tablespoon olive oil, plus more for oiling the grill grates

2 scallions, thinly sliced

Steps:

  • Preheat a grill to high heat.
  • Mix together the brown sugar, chipotle, 1 teaspoon salt and 1/2 teaspoon black pepper in a small bowl. Rub into the steaks and set aside for 15 minutes.

Mix the garlic paste with the cilantro, oil, habanero, mango, lime juice and scallions in a medium bowl. Season with salt and as much of the remaining habanero as desired for spiciness. Set aside.

Tips:

  • Choose the right cut of steak: For best results, use a tender cut of steak like flank steak, skirt steak, or tenderloin. These cuts will cook quickly and evenly on skewers.
  • Marinate the steak: Marinating the steak in a flavorful mixture of spices and herbs will help to tenderize it and infuse it with flavor. Yogurt, olive oil, garlic, and lemon juice are all good ingredients to use in a marinade.
  • Soak the skewers: If you are using wooden skewers, soak them in water for at least 30 minutes before using. This will help to prevent them from burning on the grill.
  • Thread the skewers: Alternate pieces of steak and vegetables on the skewers. Be sure to leave a little space between the pieces so that they can cook evenly.
  • Grill the skewers: Grill the skewers over medium heat for 10-12 minutes, or until the steak is cooked to your desired doneness.
  • Serve immediately: Serve the skewers hot off the grill with your favorite dipping sauce.

Conclusion:

Mango spiced steak skewers are a delicious and easy-to-make dish that is perfect for summer grilling. By following these tips, you can make sure that your skewers are cooked perfectly and full of flavor. So fire up the grill and enjoy this tasty treat!
