MAPLE-GLAZED HAM

Maple-Glazed Ham image

I cook this ham for Christmas and for Easter, but my husband thinks that twice a year is not enough. If it were up to him, we'd eat this every day! When I have larger hams, I double the glaze. If any glaze is left, we use it on pancakes the next day. -Jeanie Beasley, Tupelo, Mississippi

BAKED HAM WITH MAPLE MUSTARD GLAZE

Categories     main-dish

Time 2h55m

Yield 18 to 20 servings

Number Of Ingredients 8

One 20-pound bone-in fully cooked ham
1 1/2 cups maple syrup
1 1/2 cups Dijon mustard
1/2 cup soy sauce
1/2 cup dark brown sugar
1/2 cup apple cider vinegar
1/2 cup Worcestershire sauce
Pinch cayenne pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the ham in a roasting dish with 1 cup water in the bottom of the dish. Roast for 1 hour and 15 minutes. (Check the ham after 45 minutes and add more water if necessary or tent with aluminum foil if it is getting past a dark golden brown.)
  • Meanwhile, combine the syrup, mustard, soy sauce, brown sugar, vinegar, Worcestershire and cayenne in a saucepan over medium-high heat. Cook, stirring frequently, until the mixture is thick and bubbly, 15 to 20 minutes.
  • If you used it, remove the foil from the ham and slather the ham with the glaze. Return the ham to the oven uncovered. Continue to roast, brushing the ham with the glaze every 15 minutes, until the internal temperature is between 140 and 150 degrees F, another 1 hour and 30 minutes. (If the ham starts to become too dark on the outside, tent it with aluminum foil. We are looking for a dark, sticky, flavorful glaze on the outside of the ham. Use all the glaze! Really slather it on!)
  • Remove the ham from the oven, remove the foil, brush with any remaining glaze and cook, uncovered for another 5 minutes. Let it rest for 20 to 30 minutes.
  • Serve hot or at room temperature.

Tips:

  • Choose the right ham: Select a bone-in ham for a more flavorful result. If you prefer a leaner option, choose a boneless ham.
  • Score the ham: Use a sharp knife to score the ham in a diamond pattern. This will help the glaze penetrate the meat and create a crispy crust.
  • Make the glaze: Combine maple syrup, brown sugar, mustard, and spices in a saucepan. Bring to a simmer and cook until thickened.
  • Glaze the ham: Brush the ham with the glaze and place it in a roasting pan. Bake the ham according to the recipe instructions, basting it with the glaze every 20-30 minutes.
  • Let the ham rest: After baking, let the ham rest for at least 15 minutes before carving. This will help the juices redistribute and make the ham easier to carve.

Conclusion:

Maple and brown sugar glazed ham is a classic holiday dish that is sure to impress your guests. With its sweet and savory flavor, this ham is a perfect centerpiece for any special occasion. The glaze is easy to make and the ham can be cooked in advance, making it a great option for busy hosts. Whether you are serving it for Easter, Christmas, or any other special occasion, maple and brown sugar glazed ham is sure to be a hit.
