I cook this ham for Christmas and for Easter, but my husband thinks that twice a year is not enough. If it were up to him, we'd eat this every day! When I have larger hams, I double the glaze. If any glaze is left, we use it on pancakes the next day. -Jeanie Beasley, Tupelo, Mississippi

Categories     Food & Cooking     Ingredients     Meat & Poultry     Pork Recipes

Number Of Ingredients 8

1 smoked bone-in ham (10 to 12 pounds), room temperature
1/2 cup apricot jam
2 tablespoons Dijon mustard
3/4 cup pure maple syrup
2 tablespoons dark rum
1 garlic clove, minced
Fresh bay leaves, for garnish (optional)
Kumquats, for garnish (optional)

Steps:

  • Preheat oven to 350 degrees. Place ham on a roasting rack in a large roasting pan. Cover tightly with foil. Bake, rotating pan halfway through, 4 hours.
  • Meanwhile, make glaze: In a small saucepan, heat jam until liquefied. Strain through a fine sieve into a small bowl; discard solids. Stir in mustard, maple syrup, rum, and garlic.
  • After 4 hours, remove ham from the oven, and brush with glaze. Continue baking the ham, glazing every 15 minutes, until an instant-read thermometer inserted into thickest part of the ham (avoiding bone) registers 140 degrees, about 1 hour more. Remove from oven, and transfer to a carving board or platter. Garnish ham with bay leaves and kumquats, if desired. Slice thinly around the bone, and serve hot or at room temperature.

Tips:

  • Choose a quality ham: Look for a ham that is fully cooked and spiral-cut. This will make it easier to glaze and smoke.
  • Prepare the glaze: The maple glaze is a key component of this recipe. Be sure to use real maple syrup and brown sugar for the best flavor.
  • Smoke the ham: Smoking the ham adds a delicious smoky flavor. If you don't have a smoker, you can use a charcoal grill or oven.
  • Baste the ham: Basting the ham with the glaze during the smoking process helps to keep it moist and flavorful.
  • Serve the ham: The ham can be served hot or cold. It's perfect for a holiday meal or a special occasion.

Conclusion:

Maple glazed smoked Vermont ham is a delicious and easy-to-make recipe that is perfect for any occasion. The ham is smoked to perfection and then glazed with a sweet and tangy maple glaze. The result is a flavorful and moist ham that will be the star of your next meal. So next time you're looking for a special dish to serve, give this maple glazed smoked Vermont ham a try.
