1/2 cup packed brown sugar
2 tablespoons butter, melted
1/2 teaspoon ground cinnamon
COFFEE CAKE:
4 large eggs, separated
1 cup butter, softened
1-3/4 cups sugar
1 teaspoon vanilla extract
3 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup sour cream
2 teaspoons confectioners' sugar

Steps:

  • In a small bowl, mix walnuts, brown sugar, butter and cinnamon., Place egg whites in a large bowl; let stand at room temperature 30 minutes. Preheat oven to 350°. Grease and flour a 10-in. fluted tube pan., In a large bowl, cream butter and sugar until light and fluffy. Gradually add egg yolks. Beat in vanilla. In another bowl, whisk flour, baking powder, baking soda and salt; add to creamed mixture alternately with sour cream, beating well after each addition., With clean beaters, beat egg whites on medium speed until stiff peaks form. Fold into batter., Pour half of the batter into prepared pan; sprinkle with walnut mixture. Pour in remaining batter. Bake 45-55 minutes or until a toothpick inserted in center comes out clean. 1 1/4 cups packed light brown sugar or 1 1/4 cups dark brown sugar
3/4 cup flour
1/2 cup cold butter, cut in small pieces
2 teaspoons cinnamon
1 cup walnuts, coarsely chopped (you can toast them too, if desired)
1 1/2 cups butter, softened
1 1/2 cups maple syrup
1/2 cup packed light brown sugar or 1/2 cup dark brown sugar
1 tablespoon vanilla extract
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
7 large eggs, at room temperature
4 1/2 cups flour

Steps:

  • Preheat oven to 325*F.
  • Lightly grease 10" tube pan.
  • STREUSEL: In a medium bowl, combine the brown sugar, flour, butter, and cinnamon with a fork until crumbly.

3/4 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup butter
3/4 cup milk
1 egg
1/2 cup brown sugar, packed
2 teaspoons cinnamon
1/2 cup finely chopped walnuts
2 tablespoons butter, melted

Steps:

  • Preheat oven to 375°F.
  • Grease and flour round layer cake pan or square 8" x 8" or 9" x 9" pan.

  • Make the crumb mixture:

Sprinkle the remaining crumb mixture over the top and bake the cake in the middle of the oven for 50 to 60 minutes, or until a tester comes out clean. Let the cake cool in the pan on a rack for 5 minutes, remove the side of the pan, and transfer the cake, removing the bottom of the pan, to the rack. Let the cake cool completely and sprinkle the top with the confectioners' sugar. The coffeecake may be made 1 day in advance and kept wrapped in plastic wrap.
