ROASTED CHICKEN WHITE CHILI

1 pound boneless, skinless chicken thighs
1/4 cup vegetable oil, plus more for drizzling
Kosher salt and freshly ground white pepper
3 celery stalks, cut into medium dice (about 1 cup)
1 medium onion, cut into medium dice (about 2 cups)
1 yellow bell pepper, cut into medium dice (about 1 cup)
1/4 cup all-purpose flour
4 cups (1 quart) chicken stock, warmed
Two 15-ounce cans Great Northern beans
Two 4-ounce cans chopped green chiles
2 teaspoons garlic powder
2 teaspoons ground cumin
1 teaspoon minced fresh rosemary
2 green tomatoes, cut into large dice (about 2 cups)
1/2 to 1 teaspoon cayenne, depending on how much spice you like
Sour cream, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • Drizzle the chicken with some oil, season with salt and pepper and put on a baking sheet. Roast until the internal temperature registers 165 degrees F on a meat thermometer, 15 to 20 minutes. Set aside until cool enough to handle, then cut into large dice.
  • Meanwhile, add 1/4 cup oil to a large Dutch oven and heat over medium heat. When hot, add the celery, onions and bell peppers and saute until tender, 4 to 5 minutes. Add the flour, stir to coat the vegetables and cook until the flour starts to brown, about 3 minutes. Whisk in the warm chicken stock, stirring until combined. Add the beans, chiles, garlic powder, cumin, rosemary and green tomatoes and bring to a simmer, cooking until the mixture starts to thicken, 15 to 20 minutes.
  • Add the diced chicken and cayenne and season with salt and pepper. Cover and cook for another 10 minutes to warm through. Serve garnished with sour cream.

3 (14 1/2 ounce) cans white beans (undrained)
5 cups cooked chicken (rotisserie or boiled)
2 cups salsa
8 ounces monterey jack pepper cheese (grated)
2 teaspoons ground cumin
2 garlic cloves (minced)
1/2 cup finely crushed corn chips (optional for thicker chili)
black pepper

Steps:

  • Place all ingredients except corn chips in a crockpot and cook on high until cheese is well incorporated.
  • Chili may also be cooked on stove top on medium-high heat.
  • When chili is ready, add finely crushed corn chips and simmer 10 minutes to thicken.
  • Garnish with more crushed corn chips, cheese or sour cream.

4-6 chicken breasts, cooked and chopped or shredded (I actually microwaved bone in skinless and they stayed so moist)
1 TBSP olive oil (not really needed)
2 medium onions chopped
4 cloves minced garlic
2-3 4 ounce cans chopped green chilies (you can do your own if you like higher heat)
2-3 teaspoons+ cumin
1/4 tsp. cayenne (more or less to suit your taste)
1-2 tsp. oregano ( I also added basil and a bay leaf)
3-4 16 ounce cans undrained white beans (Navy, Cannelli, Great Northern)
5-8 cups chicken broth depending on how thick you want your soup/stew
Sliced carrots
Chopped Zucchini
Corn
Optional: Queso Blanco or Parmesan cheese

Steps:

  • Sauté onion, garlic and chili (this is why I didn't use oil, the chilies are wet) until softened. (If you opt to use fresh chilies, maybe use oil-I don't like spicy things, that is why I use canned)!!! Add spices and sauté a few minutes more. Add broth and carrots, bring to a boil, simmer a bit, then add undrained beans. Bring to a boil, reduce heat and simmer. About 30 minutes before you are ready to serve add zucchini and corn. Adjust seasonings obviously as you go! I had rice, Queso Blanco and parmesan cheese on the side, but no one used/wanted it! You could add any vegetable to this that you like, maybe just up the seasonings and chilies!

12 cloves garlic, unpeeled
1 tablespoon extra-virgin olive oil
12 shallots, chopped
2 tablespoons extra-virgin olive oil
3 Anaheim chile peppers
3 cloves garlic, minced
3 tablespoons all-purpose flour
1 cup dry white wine
7 cups low-sodium chicken broth
4 cups shredded cooked chicken
1 tablespoon chili powder
1/2 teaspoon cayenne pepper
1 15-ounce can navy beans, undrained
Kosher salt and freshly ground black pepper
1 10-ounce box frozen chopped spinach, thawed and squeezed dry
3/4 teaspoon smoked paprika
1/3 cup heavy cream
1 cup grated monterey jack cheese, for garnish

Steps:

  • Make the roasted garlic: Toss the 12 cloves garlic with the olive oil and 1 teaspoon water in a microwave-safe bowl. Cover, leaving a vent, and microwave until soft, about 90 seconds. Let cool, covered.
  • Prepare the chili: Preheat the broiler. Cook the shallots in the olive oil in a large saucepan over medium-low heat until caramelized, about 20 minutes. Meanwhile, place the chiles on a foil-lined broiler pan and broil until charred on all sides, turning, about 8 minutes. Transfer to a bowl, cover with plastic wrap and let cool. Peel the peppers with your fingers or a paring knife. Stem, seed and chop.
  • Add the minced garlic to the shallots and cook until fragrant, about 2 minutes. Add the flour and cook, stirring, until toasted, about 3 minutes. Increase the heat to high and add the wine; simmer 2 minutes, scraping up any browned bits from the pan. Add the roasted chiles, 6 cups broth, the chicken, chili powder, cayenne, beans, and salt and black pepper to taste. Return to a simmer.
  • Meanwhile, squeeze the soft pulp from the roasted garlic into a blender or food processor. Add the remaining 1 cup broth and process until smooth. Add to the chili and simmer until thickened, about 30 minutes, adding the spinach during the last 5 minutes. Add the paprika and cream and season with salt and pepper. Garnish with the cheese.

2 cans great northern beans, drained and rinsed, divided
1 tablespoon olive oil
1 lb boneless, skinless chicken breast, cubed
3 teaspoons kosher salt, divided
1 medium yellow onion, diced
3 cloves garlic, minced
2 cans green chile
2 teaspoons ground cumin
1 teaspoon dried oregano
¼ teaspoon cayenne
1 teaspoon chili powder
½ teaspoon freshly ground black pepper
4 cups low sodium chicken stock
2 cups frozen corn, thawed
shredded cheddar cheese, for serving
fresh cilantro leaf, for serving, roughly chopped
sour cream, for serving

Steps:

  • Add 1 can of Great Northern beans to a medium bowl. Mash with a potato masher or fork until chunky.
  • Add the olive oil to a large pot or Dutch oven over medium-high heat. Once the oil begins to shimmer, add the chicken and season with 1 teaspoon of salt. Cook, stirring occasionally, until the chicken is cooked through and browned on all sides, about 10 minutes.
