2 lbs beef, Ground
1 cup corn chips, Crushed
1/2 cup milk
1 large egg, Slightly Beaten
2 teaspoons salt
2 1/2 tablespoons unbleached flour
2 tablespoons butter or 2 tablespoons margarine
2 cups onions, Sliced
1 clove garlic, Crushed
1 teaspoon chili powder
1/4 teaspoon powdered cumin
1 (19 ounce) can tomatoes, Undrained
1 (4 ounce) can green chilies, Drained
1/2 cup ripe olives, Sliced

Steps:

  • In large bowl, lightly combine ground beef with corn chips, milk, egg and 1 t salt.
  • Cover and refrigerate 1 hour.
  • Shape into 15 meatballs, using 2 Rounded Tablespoons meat mixture for each.
  • Lightly roll meatballs in 2 T Flour, coating completely.
  • In large frying-pan, cook meatballs in hot butter, half at a time, stirring until evenly browned.
  • Remove meatballs from frying-pan as they are browned.
  • In same frying-pan, cook onion and garlic about 5 minutes, stirring occasionally.
  • In small bowl, combine remaining 1/2 T flour and 1 t salt, chili powder and cumin.
  • Stir into onions.
  • Add tomatoes, green chilies and olives.
  • Bring to a boil, stirring constantly; reduce heat, cover tightly and cook slowly for 30 minutes.
  • Add meatballs to tomato mizture, cover tightly and cook slowly for 20 minutes.
  • Uncover and continue cooking slowly 10 minutes.
  • Serve meatballs and sauce over hot rice.

I got a basic recipe for this from a friend many years ago. Since then, I've tweaked it to fit my family's taste. It sounds like a lot of work, but it really isn't. We find that this is one of our favorite recipes.

1 pound ground beef
1 ½ teaspoons dried oregano
1 tablespoon dried parsley
salt, to taste
1 cup rice
2 cups water
1 tablespoon cooking oil
2 small onions, minced
2 cloves garlic, minced
1 (14.25 ounce) can tomato puree
1 bay leaf
2 tablespoons white vinegar
1 teaspoon dried oregano
1 tablespoon dried parsley
½ teaspoon chili powder
1 tablespoon brown sugar
1 ½ teaspoons cumin
salt and ground black pepper to taste
1 (11 ounce) can Mexican-style corn, drained

Steps:

  • Mix together the ground beef, 1 1/2 teaspoon oregano, 1 tablespoon parsley, and salt in a bowl.
  • Bring rice and water to a boil in a pot. Cover, reduce heat to low, and simmer 20 minutes.
  • While the rice cooks, heat the oil in a skillet over medium heat. Cook 1 minced onion and 1 minced clove in the hot oil until the onion is soft; add to the beef mixture; form into 24 small meatballs.
  • Cook the meatballs in the skillet until evenly browned on all sides; drain. Place the remaining minced onion and minced garlic clove in the skillet; cook and stir until the onion is soft. Stir in the tomato puree, bay leaf, vinegar, 1 teaspoon oregano, 1 tablespoon parsley, chili powder, brown sugar, cumin, salt, and pepper; cook until thick, about 20 minutes. Add the meatballs and cook until the meatballs are no longer pink in the middle, about 10 minutes.
  • When the rice has finished cooking, stir in the corn. Serve the meatballs and sauce over the rice.

1 pound ground beef
1/2 cup rolled oats
1-1/2 teaspoons salt, divided
1/2 teaspoon pepper
1/2 teaspoon celery salt
1 teaspoon dried parsley flakes
2 cans (10-3/4 ounces each) condensed cream of asparagus soup, undiluted
2 cups water
1 cup uncooked rice
1-1/2 cups sliced celery
1 large onion, chopped
1 can (4 ounces) mushroom stems and pieces, drained

Steps:

  • In a bowl, combine the beef, oats, 1/2 teaspoon salt, pepper, celery salt and parsley. Shape by tablespoonfuls into meatballs. Place meatballs on a greased rack in a shallow baking pan. Bake at 400° for 18-20 minutes or until browned. , Meanwhile, combine rice, celery, onion, mushrooms, soup, water and remaining salt. Transfer meatballs to a greased 3-qt. casserole; pour soup mixture over. Cover and bake at 350° for 1 hour or until liquid is absorbed and rice is tender.

Leftover rice? Kimchi in the fridge? Lucky you! Roll kimchi fried rice into jumeok (fist) balls, fun! Who doesn't love spherical foods? Feel free to use one kind of rice or a combination-our favorite is a mix of short-grain white rice and sweet rice.

2 strips bacon, cut into 1/4 in (6 mm) pieces
2 scallions, thinly sliced, light and dark parts separated
2 cloves garlic, minced
1 cup kimchi, juice reserved
3 cups sweet rice, or short-grain, chilled
1 tablespoon grapeseed oil
1 tablespoon fish sauce
½ cup crumbled seasoned toasted gim, plus more for garnish
1 tablespoon toasted sesame seeds, plus more for garnish
nori sheet, for serving - optional

Steps:

  • Add the bacon to a medium nonstick or cast iron pan. Cook over medium-high heat for about 2 minutes, until the fat from the bacon begins to render.
  • Add the light scallions and garlic. Cook until the garlic is fragrant, about 1 minute, then add the kimchi and sauté for about 2 minutes, until lightly browned.
  • Add the rice, kimchi juice, grapeseed oil, and fish sauce. Stir with a wooden spoon or rubber spatula to combine and break up the clumps of rice, then fold in the dark scallions, gim, and sesame seeds. Remove the pan from the heat and let cool for about 10 minutes.
  • With wet or gloved hands, roll 2 tablespoons of the fried rice into a ball. Repeat with the remaining rice.
  • Garnish with more gim and sesame seeds and serve with nori sheets, if desired.
