Juice of 1 lemon
2 tablespoons finely chopped garlic

3 medium shallots, peeled and sliced
1 750-milliliter bottle Merlot
2 cups vegetable broth
1/4 cup all-purpose flour

  • 1. For the beef: Preheat the oven to 450 degrees F. Set a rack in a roasting pan. Heat a large skillet over medium-high heat until hot.
