SPICY MARINATED CAULIFLOWER SALAD
Simple cauliflower salad dressed in a homemade vinegar dressing that is a perfect side for a summertime BBQ, picnic, or potluck. My inspiration came from my love of giardiniera. Feel free to omit the crushed red pepper flakes for a non-spicy version.

MARINATED ROMANESCO AND CAULIFLOWER SALAD
A broccoli salad recipe I played with. Printed in First magazine, June 1998. You could also substitute broccoflower for the romanesco. References online describe the romanesco as looking like a cross between a wedding cake and a star fish! Similar to cauliflower and cooked in much the same way, but it has a nuttier flavor. Do give it a try! It's a shame to have to chop the romanesco up for this recipe! Another way to serve it is to steam the romanesco whole with just the lower stalk cut off and florets left intact. Talk about a presentation! Add a drizzle of lemon juice or butter; sprinkle of salt and pepper. Oh yes!

Place bowl in sink and pour enough boiling water over to completely cover. Cover bowl tightly with a double layer of foil and let stand 10-12 minutes. In a small bowl, whisk oil, vinegar, lemon juice, mustard, garlic, salt and pepper until well blended. Stir in parsley and oregano. Pour dressing over vegetables and toss gently to combine. Cover and refrigerate 2 hours, gently shaking/inverting bowl occasionally. Partially drain accumulated juices/dressing and transfer to serving bowl. Garnish with chives and oregano leaves.

Tips:
- Choose the right cauliflower: Look for a head of cauliflower that is firm and has tightly packed florets. Avoid heads with brown spots or blemishes.
- Cut the cauliflower into even-sized florets: This will help them cook evenly. You can use a sharp knife or a food processor to cut the cauliflower.
- Marinate the cauliflower for at least 30 minutes: This will help the cauliflower absorb the flavors of the marinade. You can marinate the cauliflower in a variety of liquids, such as olive oil, vinegar, lemon juice, or yogurt.
- Use a variety of seasonings: Don't be afraid to experiment with different seasonings when making your marinated cauliflower salad. Some popular options include garlic, onion, cumin, coriander, and paprika.
- Roast the cauliflower at a high temperature: This will help to caramelize the cauliflower and give it a delicious roasted flavor. You can roast the cauliflower in a preheated oven or on a grill.
- Serve the cauliflower salad warm or cold: Marinated cauliflower salad can be served warm or cold. If you are serving it warm, you can drizzle it with a little bit of olive oil or vinegar before serving. If you are serving it cold, you can chill it in the refrigerator for at least 30 minutes before serving.
Conclusion:
Marinated cauliflower salad is a delicious and healthy dish that can be enjoyed as a side dish or a main course. It is a great way to use up leftover cauliflower, and it is also a great way to get your daily dose of vegetables. With its variety of flavors and textures, marinated cauliflower salad is sure to please everyone at your table.
