8 portobello mushroom caps
1 cup extra-virgin olive oil
4 cloves garlic, minced
1 large shallot, minced
Zest and juice of 2 lemons
1 tablespoon chopped fresh oregano
1/2 tablespoon chopped fresh thyme
1 teaspoon honey
2 teaspoons kosher salt
2 teaspoons freshly ground black pepper

Steps:

  • Brush the mushrooms carefully with a paper towel to get rid of the excess dirt. Using a spoon, carefully scrape out the gills from the underside of the portobello cap.
  • Slice the mushroom in half along the perimeter (like you are butterflying it) so you have 2 thin rounds and place them in a large bowl.
  • In a saute pan add the oil and place over medium heat. When the oil is shimmering, add the garlic and the shallot and cook for no more than 2 minutes. Turn off the heat and add the lemon zest, lemon juice, oregano, thyme, honey, salt, and pepper and whisk vigorously.
  • Pour the mixture over the mushrooms and with your hands toss gently to coat, making sure there is even coverage.
  • Let the mushrooms stand at room temperature for at least 45 minutes.

1 pinch sugar

  • Use a spoon to remove the gills from the underside of the mushrooms. Put the mushrooms in a small baking dish.

3 tablespoons balsamic vinegar

  • Position an oven rack 4 inches from the broiler and preheat the broiler to high.

2 whole portobellow mushrooms
1 red pepper, cored, seeded and sliced
2 ounces goat cheese
1 teaspoon garlic powder

  • Mix the garlic powder, salt, pepper, basil and paprika and set aside. Using a George Foreman Grill, BBQ or any griddle, crank the heat to medium, and place your whole portobello mushrooms, slices of red pepper and thick slices of white onions onto the greased grill. Drizzle your veggies with extra virgin olive oil and sprinkle on the seasoning mix. Closes your grill and let these babies grill for about 10-15 minutes. Be sure to check periodically to make sure they aren't burning or overdone. At the 5-8 minute mark, you can lightly drip balsamic vinegar onto of the portobello mushroom. While they are grilling, place two wraps (I used a pesto basil wrap - but any flavour will work) on a plate, and set thin slices of goat cheese down the middle of each wrap. After the mushroom and peppers are done grilling, take off grill and cut the mushroom into thin slices. Place the slices of mushroom & pepper onto of the goat cheese on the wraps. Now wrap/fold the ingredients in and place the wrap back on your grill for about 3-5 minutes, until it's lightly toasted.

For Gorgonzola butter
2 ounces Gorgonzola cheese (about 1/4 cup) at room temperature
1 tablespoon unsalted butter, softened
For red pepper vinaigrette
1 red bell pepper, roasted (procedure follows), or 1/3 cup chopped drained bottled roasted red peppers
1 tablespoon white-wine vinegar
1 tablespoon water
2 tablespoons extra-virgin olive oil
four 1/2-inch-thick slices crusty bread, cut diagonally from a large loaf

  • Make marinade:
  • In a small bowl whisk together marinade ingredients. Spread soft side of bread with Gorgonzola butter.
  • Remove mushrooms from marinade and grill 2 to 3 minutes on each side, or until tender. (Alternatively, mushrooms may be grilled in a hot well-seasoned ridged grill pan over moderately high heat.) Transfer mushrooms with tongs to a cutting board and slice thin.
  • Arrange warm mushrooms on toasts and spoon vinaigrette over each open-faced sandwich. Garnish sandwiches with thyme.
  • To roast peppers:
  • Using a long-handled fork char peppers over an open flame, turning, until skins are blackened, 2 to 3 minutes.
