Time 1h20m

Yield 4

Number Of Ingredients 12

¼ teaspoon olive oil
1 clove garlic, minced
¼ cup soy sauce
½ lemon, juiced
1 teaspoon honey
½ teaspoon olive oil
⅓ teaspoon packed brown sugar
¼ teaspoon sea salt, plus more for garnish
¼ teaspoon ground black pepper, plus more for garnish
¼ teaspoon red pepper flakes
4 (6 ounce) fillets salmon
1 tablespoon olive oil

Steps:

  • Heat 1/4 teaspoon olive oil in a small skillet over medium-high heat. Saute garlic in hot oil until just beginning to brown.
  • Mix sauteed garlic, soy sauce, lemon juice, honey, 1/2 teaspoon olive oil, brown sugar, sea salt, black pepper, and red pepper flakes together in a bowl; pour into a large resealable plastic bag. Add salmon fillets, turning to coat with the marinade, squeeze bag to remove excess air, and seal the bag. Marinate in the refrigerator for 1 hour.
  • Remove salmon from the marinade and shake to remove excess liquid. Reserve 3 tablespoons marinade and discard remainder.
  • Heat 1 tablespoon olive oil in a large skillet over medium heat. Arrange salmon fillets in the hot skillet, pour reserved marinade over the salmon, and place a lid on the skillet; cook until salmon is browned on each side and flakes easily with a fork, occasionally spooning liquid from the pan over the fillets, 2 to 3 minutes per side. Garnish salmon with additional sea salt and black pepper.

Yield 4 servings

Number Of Ingredients 12

2 thumb-sized piece of ginger, peeled and finely grated
1 lemon and 2 limes, zested
1 bottle soy sauce
A dash mirin
1 medium salmon fillet, about 2 1/2 pounds (1.1 kilograms), descaled and pinboned with the skin left on
9 sweet potatoes, scrubbed and pierced
Sea salt

Twice as much olive oil to the juices
1 small bunch fresh mint, chopped

Provided by Pierre Franey

Categories     dinner, weekday, main course

Time 35m

Yield 4 servings

Number Of Ingredients 8

2 medium sweet red peppers
2 tablespoons butter
4 skinless boneless salmon steaks, about 4 to 6 ounces each
salt and freshly ground pepper to taste
4 tablespoons finely chopped shallots
1/4 cup dry white wine
1/2 cup heavy cream
2 tablespoons finely chopped dill and dill sprigs for garnishing

Steps:

  • Core and remove the seeds from the red peppers. Cut them into 1/4-inch cubes or strips.
  • Heat the butter in a nonstick skillet large enough to hold the salmon steaks in one layer.
  • Season both sides of the fillets with salt and pepper to taste. Place the steaks in the pan and cook over high heat until they are lightly browned, about a minute and a half on each side. The time will vary, depending on the thickness of the fish and the doneness desired.
  • Transfer the steaks to a warm platter. Leave the cooking butter in the skillet. Add the shallots and the red peppers. Cook, stirring, until wilted.
  • Add the wine, reduce by half, add the cream and cook, stirring over medium high heat until reduced again by half. Check the seasoning.
  • Add the salmon steaks, the chopped dill and any juices that have accumulated around the steaks, and bring to a simmer. Cook one minute. Do not overcook. Serve immediately with the dill for decoration.

Tips:

  • Choose the freshest salmon possible. Look for fillets that are bright in color and have a mild, fishy smell.
  • Use a food-safe container when marinating the salmon. Glass or ceramic containers are best, as they won't absorb the flavors of the marinade.
  • Marinate the salmon for at least 30 minutes, but no longer than 24 hours. This will allow the flavors of the marinade to penetrate the fish.
  • Cook the salmon over medium heat. This will help to prevent the fish from overcooking and becoming dry.
  • Serve the salmon immediately with your favorite sides. Roasted sweet potatoes and red pepper salsa are both delicious options.

Conclusion:

This marinated salmon recipe is a delicious and healthy way to enjoy this versatile fish. The marinade, made with honey, soy sauce, and orange juice, infuses the salmon with flavor, while the sweet potatoes and red pepper salsa add a pop of color and sweetness. This dish is perfect for a weeknight meal or a special occasion.
