BROILED SALMON WITH HOMEMADE TERIYAKI GLAZE

Broiled Salmon with Homemade Teriyaki Glaze image

Simple salmon cooked under the oven's broiler with a homemade teriyaki glaze. I really like how well teriyaki flavor pairs with salmon but store-bought teriyaki sauce is so thin and doesn't stay on but runs underneath the fish. I came up with this homemade version that is more of a glaze that stays on the fish.

I recreated this from a dinner I had at Perkins one night. It's a lemon peppered filet that is then glazed with teriyaki sauce (so yummy!!!) This recipe is for the fresh salmon version-but I'll include my "cheaters version"using frozen filets-for those nights you want salmon-but don't have much time. The Glaze really "makes" this dish.

Yield 2-4 serving(s)

Number Of Ingredients 3

1 lb fresh boneless salmon fillet
3 -4 teaspoons prepared lemon pepper seasoning (McCormick)
1/2 cup bottled teriyaki sauce (Grillmates)

Steps:

  • Season the salmon with the lemon pepper seasoning (honestly-I do not measure-I just shake on the seasoning)Cut salmon into serving portions.
  • Hint:Remove skin if you prefer(which I do) but skin can be left on-just season both sides and cook top side down first(display side).
  • Place salmon in heated pan (I use medium -high heat to start, then go down to medium)-with a small amount of olive oil.
  • If leaving the skin on-place fish in the pan skin side up.
  • Cook until flesh becomes flaky, forming a crust from the olive oil and seasoning.
  • Flip and cook few minutes more until desired doness.
  • Pour prepared teriyaki sauce over filets in the last few minutes to warm.
  • Serve with your favorite seasoned rice and a nice salad.
  • Cheaters method:.
  • I just purchase Gordon's frozen Lemon Butter salmon filets-heat according to direction (i do cheat and use the microwave method as stated on the box).
  • Pour on some teriyaki sauce-warm and serve.

TERIYAKI SALMON WITH MARMALADE BUTTER

Teriyaki Salmon With Marmalade Butter image

Make and share this Teriyaki Salmon With Marmalade Butter recipe from Food.com.

Provided by DrGaellon

Categories     Broil/Grill

Time 2h26m

Yield 8 serving(s)

Number Of Ingredients 11

4 ounces butter, softened
2 tablespoons orange marmalade
8 (4 ounce) boneless salmon fillets, not steaks
1/2 cup vegetable oil
1/2 cup soy sauce
1/2 cup dry sherry or 1/2 cup rice wine
4 garlic cloves, minced
1 tablespoon grated gingerroot (about 1-inch piece)
6 tablespoons orange zest (about 3 large oranges worth)
2 tablespoons toasted sesame oil
2 tablespoons honey

Steps:

  • Make the marmalade butter by thoroughly combining the butter and marmalade - a stand mixer with a paddle is ideal. Roll the butter in parchment paper into a 1½" wide log and store in the refrigerator to harden.
  • Heat the oil over medium-high heat. Add the garlic, ginger root and orange zest and cook two minutes.
  • Add the soy sauce, wine, sesame oil and honey and cook until the alcohol has evaporated. Sniff the fumes to determine this. If the fumes irritate your nose, there is still alcohol present. Cool completely.
  • Pour marinade over the salmon and refrigerate for at least two hours.
  • Broil or grill the salmon for three minutes per side and top with the marmalade butter.

Tips:

  • Choose fresh and high-quality salmon. Fresh salmon should be firm to the touch and have a bright pink color. Avoid salmon that is slimy or has a dull color.
  • Cook the salmon to your desired doneness. Salmon is safe to eat when it reaches an internal temperature of 145°F (63°C). However, some people prefer to cook it to a higher temperature for a more well-done texture.
  • Don't overcook the salmon. Overcooked salmon will be dry and tough. Cook it just until it is opaque in the center.
  • Use a good quality marmalade. The marmalade you use will greatly affect the flavor of the salmon. Choose a marmalade that is made with real fruit and has a good balance of sweetness and acidity.
  • Make sure the glaze is thick enough. The glaze should be thick enough to coat the salmon evenly. If it is too thin, it will run off the salmon and not adhere properly.
  • Serve the salmon immediately. Marmalade teriyaki glazed salmon is best served immediately after it is cooked. The glaze will harden as it cools, so it is important to serve it while it is still warm and sticky.

Conclusion:

Marmalade teriyaki glazed salmon is a delicious and easy-to-make dish that is perfect for any occasion. The combination of sweet and savory flavors is sure to please everyone at the table. So next time you are looking for a new way to cook salmon, give this recipe a try. You won't be disappointed!
