This Spicy Sausage & Cabbage Soup is light on calories but big on flavor. It will heat you from the inside out on a chilly evening.

2 tbsp olive or avocado oil
1 lb beef sausage (Cut into half-circles. Chicken or Pork would also work.)
2 medium white or yellow onions (finely diced)
4 ribs celery (chopped)
2 green bell peppers (finely diced)
1 head of cabbage (chopped)
56 oz cans of diced tomatoes (two 28 oz cans)
32 oz chicken stock
1 1/4 tbsp cajun or creole seasoning
salt & pepper to taste
4 green onions (thinly sliced)
1/2 cup fresh cilantro (chopped)

Steps:

  • Heat oil over medium heat in a large pot. Add sausage, onion, and celery. Sauté for approximately 5 minutes, stirring frequently.
  • Add bell pepper, stir, and sauté for an additional 3 minutes.
  • Add cabbage, diced tomatoes, chicken stock, and Cajun seasoning (I like Tony Chachere's Original Creole Seasoning). If your sausage is already spicy start with less Cajun seasoning and taste before adding more.
  • Stir. Bring to a boil. Reduce heat, cover, and simmer for 15 minutes.
  • Salt and pepper to taste.
  • Stir in green onion and cilantro a few minutes before you're ready to serve.

1 tablespoon canola oil
1 tablespoon butter
2 medium carrots, thinly sliced and halved
1 celery rib, thinly sliced
1 teaspoon caraway seeds
2 cups water
2 cups chopped cabbage
1/2 pound fully cooked smoked kielbasa or Polish sausage, halved and cut into 1/4-inch slices
1 can (14-1/2 ounces) diced tomatoes, undrained
1 tablespoon brown sugar
1 can (15 ounces) cannellini beans, rinsed and drained
1 tablespoon white vinegar
1 teaspoon salt
1/4 teaspoon pepper
Minced fresh parsley

Steps:

  • In a 3-qt. saucepan, saute onion in oil and butter until tender. Add carrots and celery; saute for 3 minutes. Add caraway; cook and stir 1 minute longer. Stir in the water, cabbage, sausage, tomatoes and brown sugar; bring to a boil. A spicy tomato soup with sausage and cabbage. This is my own creation and very easy to make. The full amount of cayenne makes it quite hot so start low if you don't eat cayenne frequently.

1 lb sliced smoked sausage or 1 lb kielbasa
1 large onion, chopped
1 celery rib, sliced
1 (16 ounce) can diced tomatoes
1 (46 ounce) can tomato juice
1 tablespoon salt (or to taste)
1 -1 1/2 tablespoon ground cayenne pepper
2 g Splenda sugar substitute (or one T sugar)
1/2 teaspoon fresh minced garlic
1/3-1/2 head cabbage, chopped

Steps:

  • Slice the sausage, onion, celery and place in 6 quart pan. Add the diced tomatoes and tomato juice.
  • Boil first 6 ingredients until onion and celery are tender.
  • Add salt, cayenne, splenda and garlic. Adjust to taste preference. If soup is too thick, add a cup of water.
  • Add cabbage and cook just until the cabbage is tender--will only take 5-10 minutes.

1 tablespoon olive oil
1 lb Italian sausage, casings removed and chopped into bite size pieces
1/2 head cabbage, shredded
1 onion, sliced thin
red pepper flakes, to taste
1 teaspoon salt
1 teaspoon pepper
1 teaspoon sage
1 tablespoon sugar
1 tablespoon Worcestershire sauce
2 teaspoons garlic, minced
1 (28 ounce) can diced tomatoes, undrained
6 cups water
2 -3 tablespoons chicken bouillon granules
1/2 cup instant rice

Steps:

  • In a large pot, saute cabbage and onion in butter and olive oil on HIGH heat until onions start to soften.

It was very, very good. He also called for "hot" Italian sausages, but I substituted "sweet". It was plenty spicy, especially for my 85-year old aunt.

2 tablespoons olive oil
1 1/2 lbs Italian sausage, cut into 1/2 inch pieces
2 white onions, sliced
4 garlic cloves, thickly sliced
1/4 teaspoon red pepper flakes
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup sun-dried tomato packed in oil, chopped
1/2 cup dry white wine
1/2 lb green cabbage, thinly sliced (about 4 cups)
6 cups chicken stock
6 slices garlic bread, cut 1/2 inch thick

Steps:

  • Heat the olive oil in a small stockpot or Dutch oven set on high heat until sizzling, about 2 minutes.
  • Add the sausage and cook for 3 minutes.
  • Using a slotted spoon, remove the sausage to a bowl, and set aside.
  • Add the onions, garlic, red pepper flakes, salt, pepper and sun-dried tomatoes to the same pan and cook on medium-high for 3-5 minutes, stirring occasionally, until the onions are soft.
  • Stir in 1/2 cup white wine and cook for 1-2 minutes.

2 garlic cloves (minced or mashed)

1/2 teaspoon basil, crumbled
3 tablespoons fresh parsley, chopped
1 medium green pepper, chopped

3 cups cooked bow tie pasta (uncooked, 5oz)
