6 Large Eggs
1 Tablespoon of Olive Oil
8 oz of Mushrooms (sliced)
2 leeks (white part only, chopped)
3/4 Cup of Gruyere Cheese (grated)
4 oz of Mascarpone Cheese
Salt and Pepper to taste
4-5 leaves basil (chopped)

Steps:

  • Preheat oven to 375 Degrees Fahrenheit
  • In a skillet over medium heat pour the olive oil
  • In a bowl, mix the eggs, mascarpone cheese and 1/2 cup of the Gruyere Cheese. Add salt and pepper
  • Toss the leeks into the skillet and cook until they soften, 3-4 minutes. Add the mushrooms and let them cook for 3-4 minutes. Pour in the egg mixture and let it cook in the skillet for 2 minutes or until the eggs begin to set on the sides. Sprinkle in the rest of the Gruyere cheese
  • Place the skillet in the oven and let the frittata cook for about 8 to 10 minutes or until the eggs brown and set.
  • Carefully remove the skillet from the oven using an oven glove or a kitchen towel and sprinkle the basil on top.

1/3 cup heavy whipping cream
1/2 cup grated Romano cheese, divided
1-1/2 teaspoons salt, divided
5 tablespoons olive oil, divided
3/4 pound sliced fresh mushrooms
1 medium onion, halved and thinly sliced
2 tablespoons minced fresh basil
2 garlic cloves, minced
1/8 teaspoon pepper
1 carton (8 ounces) Mascarpone cheese

Steps:

  • In a large bowl, whisk eggs, cream, 1/4 cup Romano cheese and 1 teaspoon salt., In a 10-in. skillet, heat 2 tablespoons oil over medium-high heat. Add mushrooms and onion; cook and stir until tender. Add basil, garlic, pepper and remaining salt; cook and stir 1 minute longer. 12 scallions, including green parts, cut into 1 1/2-inch pieces
1/2 pound shiitake mushrooms, stems discarded and caps sliced 1/4 inch thick, or white mushrooms, sliced

1/2 cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees. Heat olive oil in a medium ovenproof skillet over medium heat. Add scallions, mushrooms, and 1/2 teaspoon salt; cover, and cook until the vegetables are very soft, about 15 minutes. (The vegetables start out piled high, but they cook down quickly.)

1 tablespoon unsalted butter
1/4 cup extra virgin olive oil
1 garlic clove, finely chopped
1/4 lb white mushroom, thinly sliced
1 small onion, minced
2 cups spaghetti in tomato sauce
2 ounces lean bacon (if using bacon, blanch it first in boiling water for a few minutes, then rinse and drain) or 2 ounces black forest ham, finely chopped (if using bacon, blanch it first in boiling water for a few minutes, then rinse and drain)
1/2 cup heavy cream
1/2 cup freshly grated parmesan cheese
salt & freshly ground black pepper
8 large eggs, lightly beaten

  • Preheat oven to 350°.
  • In a medium skillet, melt butter along with 2 tablespoons of olive oil over moderately high heat. Add the garlic and saute for about 30 seconds. Add mushrooms and continue stirring for about 2 minutes. Add onion and cook until softened, about 5 minutes.

  • Remove from oven and run a knife around the edge of the pan to loosen the frittata from the sides. Place a large round plate or platter over the top of the pan and flip the skillet and platter. Use oven mitts as the skillet will be hot. Serve it cut into wedges, hot or at room temperature.

1/4 cup 2% low-fat milk
1/4 cup grated parmesan cheese
1 teaspoon dried sage

1 medium onion, diced
1/2 cup red pepper, diced
8 ounces sliced small mushrooms
2 garlic cloves, minced
2 tablespoons minced parsley (optional)
3/4 cup shredded provolone cheese, Swiss or 3/4 cup jarlsberg cheese

Steps:

  • In a large bowl or measuring cup whisk eggs, milk, Parmesan cheese, sage and pepper together until well mixed, set aside. Preheat oven to 350ºF (180ºC).
  • In a 10"(25 cm) non-stick skillet heat oil over medium- high heat; sauté onion and red pepper 2-3 minutes or until softened. Add mushrooms and sauté 4-5 minutes or until lightly browned; add garlic and cook 1 minute. Pour egg mixture into skillet mixing lightly to incorporate mushrooms; sprinkle with parsley if desired.   • Variation: Instead of cooking the frittata in oven it may be cooked on top of stove over medium- low heat; lifting outer edges of omelet to allow uncooked portion to run underneath, then cover and cook until just set. Turn off heat. Sprinkle with cheese and cover to melt cheese.
  • Tip: Substitute 4 eggs and 4 egg whites for the 8 eggs to lower fat.
