MASHED POTATO SPINACH CASSEROLE

Mashed Potato Spinach Casserole image

This is one of my old stand-by recipes from the More with Less Cookbook. It's a good one for those nights when I don't really feel like cooking. I suppose this is meant to be a side dish, but I always up the amounts a bit and serve it as a meatless main dish. The original recipe calls for the addition of dill seed and chives, but I never use them for our family.

4 potatoes, peeled and cubed
1 tablespoon extra-virgin olive oil
½ cup diced red bell pepper
½ cup diced yellow bell pepper
¼ cup all-purpose flour
2 cups chicken broth
ground black pepper to taste
3 ounces baby spinach leaves
½ cup grated Parmesan cheese
2 tablespoons bacon bits
1 tablespoon minced garlic
2 tablespoons butter
½ cup cream
salt and pepper to taste

Season to taste with black pepper.

Tips:

  • For the creamiest mashed potatoes, use Yukon Gold or russet potatoes. They have a high starch content that will give you a smooth and fluffy texture.
  • To make sure your mashed potatoes are lump-free, use a potato ricer or food mill.
  • Don't overcook your potatoes. They should be tender but still hold their shape.
  • Add your favorite seasonings to the mashed potatoes. Garlic powder, onion powder, and black pepper are all good options.
  • For a cheesy mashed potato bake, add a cup of shredded cheddar cheese to the mashed potatoes before baking.
  • If you're using fresh spinach, be sure to wash it thoroughly and chop it finely.
  • To make sure the spinach is evenly distributed throughout the bake, stir it into the mashed potatoes before baking.
  • Bake the mashed potato spinach bake at 350 degrees Fahrenheit for 20-25 minutes, or until it is heated through and bubbly.

Conclusion:

Mashed potato spinach bake is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover mashed potatoes. With a few simple ingredients, you can create a flavorful and satisfying dish that the whole family will enjoy.
